Peanut Chicken Lettuce Wraps
A super quick dinner made in 25 min! It’s so hearty, filling, and low-carb, yet the family will still be begging for more!
Every time I make lettuce wraps, I think to myself:
Why don’t I make this more often? I’m cutting down on carbs. I’m eating more greens. I’m consuming less calories, and I feel like I’m losing weight right this second.
That is, after I pour out every last drop of the peanut sauce on top of my “carbless” lettuce wraps here.
Hey, we all need that balance. And these chicken lettuce wraps is that perfect balance.
It’s a simple, super quick stir-fry featuring ground chicken and veggies topped with a gingery peanut sauce that is legit out of this world.
I’ve made this 4 times already. One time I forgot the butter lettuce at the store. But don’t worry. I didn’t go back to the grocery store.
I just grabbed the skillet and a spoon. See, problem solved.
Peanut Chicken Lettuce Wraps
Ingredients
- 1 tablespoon vegetable oil
- 1 tablespoon toasted sesame oil
- 1 pound ground chicken
- 1 3.5-ounce package shiitake mushrooms, diced
- 1 carrot, peeled and diced
- 1 shallot, diced
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- ¼ cup hoisin sauce
- 2 teaspoons chili garlic sauce
- 1 teaspoon fish sauce
- 2 tablespoons chopped fresh cilantro leaves
- 1 head butter lettuce
For the peanut sauce
- 3 tablespoons creamy peanut butter
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon freshly squeezed lime juice
- 2 teaspoons brown sugar
- 1 teaspoon chili garlic sauce, or more, to taste
- 1 teaspoon freshly grated ginger
Instructions
- To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside.
- Heat vegetable oil and sesame oil in a large skillet over medium high heat. Add ground chicken, mushrooms, carrot and shallot. Cook until browned, about 5-7 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
- Stir in garlic and ginger until fragrant, about 1 minute.
- Stir in hoisin sauce, chili garlic sauce and fish sauce until heated through, about 30 seconds. Remove from heat; stir in cilantro.
- To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style, drizzled with peanut sauce.

Thank you for this great recipe! We love it and it’s in our dinner rotation! My daughter is picky and recipes like this help me with expanding her palate. In the past, I’ve halved the chili garlic sauce and she found it a bit too spicy, so I know omit it and then remove her portion, and add only to mine. She likes to have it with Jasmine rice, instead of lettuce, but that’s all good! I love it as a lettuce wrap, and often have leftovers for lunch the next day!

Made this today and it came out so well. All of us loved it and was pretty easy to make. I plan to make this again for a potluck, however some folks are allergic to mushroom. If I avoid the mushrooms will it alter the taste? Any suggestions on what I can substitute it with?

The lettuce wraps are good and I will likely make again, but please do not be fooled that this is a “quick 25-minute dinner”! I do not mind chopping and tend to cook more involved meals and it took me at least 45-50 minutes of prep time!
Can’t wait to try this! I generally buy a packaged seasoning/sauce, but it’s so expensive!
Also, the lettuce doesn’t hold all the filling without falling apart a little, so I just make it as a salad!
I used what was on hand, ground pork, and it was great with that too. I also added some diced water chestnuts for even more crunch. We loved it and will be making it again.

Made this tonight with 3 changes based on what I had on hand (ground turkey instead of chicken, white mushrooms, Worcestershire instead of fish sauce) and we thought it was so so good. We also made it over rice instead of lettuce wraps for personal preference. It was on the spicy side, which we like, but if you’re sensitive to it maybe decrease the chili garlic sauce to 1 tsp. We didn’t find the peanut sauce spicy though. We will definitely be making this again, thanks for a great recipe!
After a long day at work, I needed something easy to make for dinner. I found this recipe & followed it exactly but, used fresh chicken instead of the ground chicken. I cut two chicken breasts into small bite-size pieces and continued with the recipe as written. All the ingredients blended nicely and made the perfect weekday dinner. Thank you so much for sharing.!

These are AMAZING. I’ve tried for years to find a chicken peanut lettuce wrap recipe that was as good as the ones at our favourite Thai restaurant, and none have even come close until now! I made these just as the recipe calls for, wth the addition of some crushed peanuts to sprinkle on top for extra crunch. Like a previous reviewer, I couldn’t find “chili garlic sauce” but used Blue Dragon brand Thai Sriracha Chilli Sauce, which was the perfect amount of heat along with the fresh ginger. Definitely a keeper – even my picky teenager loved them.

I made this and we loved it. I substituted coconut aminos for soy sauce, and because I couldn’t find anything called “red chili garlic sauce”, I used thai sweet chili sauce, which is not at all hot. What exactly is red chili garlic sauce? Do you mean Sriracha?
My jar is called “Chili Garlic Sauce” and I can buy it in any local grocery store in the Asian section. The sauce is red. It’s a small, 6 oz. jar. It’s not sriracha.

I have one question – and it might be silly! My husband isn’t a big lettuce person – Would it be okay to put this either on a wrap (tortialla style) or just over rice??

This is my second time making this recipe. The first time we made as written. My family loved it, even my picky eater had seconds. It taste amazing as is.
Tonight we substituted cubed zucchini for the mushrooms and added grated carrots, onion, and cabbage. I did add more Red Chili Garlic Sauce, but we like it hot. As an added flavor boost we cooked our chicken and veggies with a tablespoon of coconut oil. The coconut oil with the rest of the seasonings was really good. Top with crushed peanuts for added crunch.

This recipe has so much flavor!!! My husband also loved it! It just is a little time consuming chopping and grating ingredients. So put on some good music and get started.

Oh my goodness, these were so ridiculously good and so ridiculously easy! We used ground Turkey because it’s what we had in the house. We also added broccoli slaw since we had it around and wanted to include more veggies. I’ll probably add red cabbage next time too and put the mushrooms in first so they can brown. Bonus points because I could just set aside a little before adding the sauces in the pan so my 11 month old could eat almost exactly what we’re eating. Always a huge bonus to not have to make 2 dinners! I can already tell this is going to become a new staple!

I didn’t have mushrooms so I replaced with water chestnuts and cabbage slaw on the top. But seriously the sauce makes it the dish!!!
SO amazing- I’ve made this several times and it’s definitely in the rotation permanently. (I’m making it tonight again!) I use a bit more mushroom than it calls for and added the water chestnuts, as recommended by another commenter. LOVE. We’re always scraping the bowls- everything is so good!

I made this tonight for dinner and my family loved it! I did not have hoisin sauce so I ended up just using soy sauce and it still turned out okay I think! We also ate ours with rice (a spoonful of rice along with the lettuce wraps, kind of like how one might eat samgyupsal). Soooo damn delicious!! I also just want to say that I’ve made like maybe 10 or more of Chungah’s recipes and they are ALL sooo good.

Many thanks for this recipe…please keep posting more Asian inspired recipes as that is my fav. cuisine at the moment. I find the ground chicken way too expensive for my modest budget and frankly quite difficult to find in my area, so I use whatever is on sale, usually pork shoulder or chicken legs, which I cut into cubes and cook accordingly. I love the peanut sauce. Also I make the mixture and wrap it into tortilla shells or pita bread.
I haven’t tried this recipe yet but definitely will be making it. I love your main dish recipes but wonder always wonder what side dishes to serve. Any chance that you can start giving suggestions on side dishes, wine, etc.? Thanks and am definitely a follower of yours.
The recipe was good but I think you should add a calorie count in a carbohydrate count if you’re calling it low carb.
Wife just good meal, very good.. wish you would state the nutrition like how low of a carb it is? The fat? Etc.. especially when someone is on keto
Hi, I’m on the free Lose it app, and it has a recipe option where you can input all ingredients of a recipe, with the calorie, carb, etc amounts, state how many servings it makes and it calculates calories per serving. I find it very helpful.
I have been making your P.F. Chang lettuce wraps for years but this recipe is better. I love the seasonings and the peanut sauce adds so much flavor to the wraps. The only change that I made was to reduce the garlic chili sauce to 1/2 tsp. because my husband and I do not like heat.

This dish is AMAZING! I AWAYS DOUBLE THIS RECIPE AND SAUCE!! WE NEVER HAVE LEFTOVERS . (Family of 5)… I have now been keeping the staples (hoisin sauce, garlic chili sauce and fish sauce) of this recipe always on hand since it has now become one of our regular rotations.
If ground chicken is difficult to find or too costly (it’s $6.99/pound here where I live). I found a work around the ground chicken dilemma…I cut up about 2 pounds of boneless skinless chicken breast in about 1 inch cubes, lay it on a parchment paper lined cookie sheet and freeze it for about 30-45 minutes. Then once it is slightly frozen place in your food processor and it will end up as ground chicken! It’s a huge cost savings too!

We were surprised by how good this is! I kept tasting the peanut sauce on it’s own and therefore told my husband don’t expect much. And then we took a bite with all the fixing, minus cilantro, and chili garlic sauce and subbed red onions for the shallots and added red bell pepper and peanuts, it was absolutely incredible. So much so we are making for a second night in a row and this time adding rice and water chestnuts.

Made these last night using leftover rotisserie chicken (finely chopped) and a homemade hoisin sauce recipe I found online. IT WAS AMAZING!!! Restaurant quality flavor and the whole family LOVED it, even the very picky 4-year-old! I’m not a huge fan of ground chicken, so I’ll stick with chicken breast or rotisserie in the future. But, this is such a quick and easy recipe and perfect for those hot summer days when no one wants a heavy, hot dinner. It would also be delicious over rice or rice noodles.

I have made dozens of lettuce wrap recipes over the years, as well as dozens of peanut sauce recipes. This is the only one I have ever decided to save…it was that good! I was a little skeptical about the amount of hoisin sauce, but the fish sauce and chili garlic sauce cut the sweetness and made for great balance of flavors. I did cut the peanut sauce sugar by half, but that’s the only modification I made. This may well be one of the best recipes to come out of my “stay at home” cooking, now going on 6 weeks in my state. I keep looking for interesting things I can make using ingredients I have on hand. Sadly, I had just used the last of our cilantro (hurry up and grow, little seedlings!) and had no fresh mushrooms (thought about using frozen edamame in their place, but didn’t), but it was still great without those 2 ingredients. I am looking forward to trying it again post-Covid19 with the additional flavor of cilantro and texture of the shiitakes. Thanks for a great recipe. Just made this for dinner, Wow. My husband is doing low carb so this was right up his alley. I did change a couple of things due to dietary allergies but the recipe still came out great. Due to a peanut allergy I used crunchy WOW Butter which is absolutely nut free but taste like peanut butter. I omitted the fish sauce also due to allergies. Everyone loved the meal and it is so versatile.
I slightly browned the chicken before adding the veggies and also added salt and pepper to the chicken otherwise I felt it would be missing seasoning.
This was really great! I used natural peanut butter with no sugar added, and the sauce was so good! Really easy to pull together, and it tasted good over rice, as well as in the lettuce wraps.

I made this with ground turkey (I just can never find ground chicken!) it was so delicious and filling but not heavy. Ya definitely wanna use a super fresh head of lettuce, the CRUNCH is superb.
This dish is usually a little overpriced in restaurants, but this recipe makes it so easy to make at home, All the ingredient except maybe lettuce are easy to keep on hand! I made it with fried rice for a whole meal.

Oh my goodness! This is such an amazing recipe. I made it tonight, just got done with dinner and everyone loved it! My kids (8 and 2 1/2) even ate it (without the lettuce). I couldn’t find fish sauce so I used oyster sauce. I also added water chestnuts in the mushroom mixture as well as peanuts for a topping. I served with cauliflower fried rice and edamame.

FANSTASTIC! I used ground turkey, plain white mushrooms, soy instead of fish sauce. We couldn’t stop eating them. Next time we will top with chopped peanuts and scallions.
My husband and I love this recipe! I’ve made it 4-5 times now and it’s fantastic! I use chunky peanut butter for extra crunch in the peanut sauce, and extra lime because we really like lime. I’ll sometimes make this in the morning or afternoon so all I have to do is heat it up for dinner, we discovered that it’s one of those meals that tastes great “left over”. I’ll even double the recipe occasionally so we can have it a few days in a row, lol!

These were really tasty. I followed the directions exactly. This is definitely a recipe I’ll keep. I’ll probably use the leftover mushrooms to make mushroom ramen again, because my husband and I really liked that recipe, too.

Nice tasty meal that comes together pretty quickly – our picky daughter even said she would would eat it again! I dislike buying ground poultry of any kind, so used a package of chicken breasts that had been hiding in the freezer instead. Chopped them into 1/4 inch dice while still semi-frozen, and they cooked up just fine. One comment/criticism of a general nature: You are inconsistent in noting the number of servings your recipes provide. We fed 3 with a serving of leftovers remaining using 2 breasts (I did ramp up the carrots and shitakes though). Assume using a pound of ground chicken would yield 4 to 5 servings. Bottom line: This is GREAT food with lots of fresh flavors – I highly recommend it!

Substitute soy sauce. No big deal. My husband doesn’t like anchovies, which are the base of fish sauce.

I made this and it was AMAZING!! I forgot the shallot so used a 1/4 cup onions and substituted Oyster sauce for the fish sauce because I already had the oyster sauce. The peanut sauce was to die for! I could have just eaten that by itself!! When I make it again I will probably just use 1 teaspoon of chili sauce as I am a wimp about hot spices but honestly it added just the right kick to it!

What a great idea! But unfortunately, without having tried this myself, I cannot answer with certainty. As always, please use your best judgment when making substitutions and modifications.
Try sunflower seed butter (closest to PB, IMO) or tahini. Flavor won’t be exactly the same, but at least you’ll be safe. Unless you have allergies to sunflower and sesame seeds as well!
