My favorite cozy weeknight soup made in just 30 min! It’s so stinking easy too. Loaded with tender tortellini, sausage and kale!
Have you seen the news? It’s apparently -50 degrees windchill in Chicago right now.
I wish I was joking. Meanwhile, it was 69 degrees F here in LA today. How will Butters and I survive in the Windy City?
I mean, I’ve loaded up on parkas and electric blankets for myself and Butters. But I don’t know, guys. It’s going to be a dicey winter for us Californians.
But what I do know is this – have as much of this creamy tortellini soup as possible until the polar vortex passes.
That and all the crusty bread to sop up all this creamy goodness.
Oh, and the wine. That helps warm you up too, no?

WHAT IF I AM NOT A BIG FAN OF KALE?
Swiss chard, baby spinach, collard greens, and cabbage are all great options.
WHAT TYPE OF TORTELLINI IS BEST?
I personally love using fresh cheese tortellini for a more neutral base but your favorite tortellini would also work beautifully here.
WHAT IS HEAVY CREAM?
Heavy cream (or heavy whipping cream) has one of the highest fat contents with about 36-40% fat. Half and half or whole milk are suitable substitutes, but will yield a lighter result.
IS THIS FREEZER FRIENDLY?
Yes! You can freeze the leftovers without the tortellini and heavy cream (cream soups tend to separate when frozen) in individual freezer bags, thaw overnight, and reheat on the stovetop, adding cooked tortellini and heavy cream when serving.
Creamy Tortellini Soup
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casing removed
- 3 cloves garlic, minced
- 1 medium sweet onion, diced
- 2 teaspoons Italian seasoning
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons all-purpose flour
- 4 cups chicken stock
- 1 (8-ounce) can tomato sauce
- 1 (9-ounce) package refrigerated three cheese tortellini
- ½ bunch kale, stems removed and leaves chopped
- ⅓ cup heavy cream
- 3 tablespoons chopped fresh basil
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat.
- Stir in garlic, onion and Italian seasoning. Cook, stirring frequently, until onions have become translucent, about 2-3 minutes; season with salt and pepper, to taste.
- Whisk in flour until lightly browned, about 1 minute.
- Gradually whisk in chicken stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes.
- Stir in tortellini; cover and cook until tender, about 5-7 minutes.
- Stir in kale until wilted, about 1-2 minutes. Stir in heavy cream and basil until heated through, about 1 minute; season with salt and pepper, to taste.
- Serve immediately.

This was so tasty! I used half the amount of kale because my kids aren’t a fan. I also added fresh grated Parmesan because the soup consistency wasn’t thickening up for me. I will definitely make again!
This is fancy restaurant soup! Love it! I made this about 6 months ago as written. It was so amazing and I didn’t think I’d like Kale. It did take longer to cook with the Kale. Delicious!
I made it again today but used homemade sausage/burger meatballs that I just froze yesterday since my sausage wasn’t thawed. The meatballs had garlic, onions and seasonings!
I sautéed chopped carrots, celery and some pre chopped garlic and onion and added the flour. I used my crockpot. Added the frozen Italian meatballs, chicken stock, tomatoes, paste, carrot mixture. I added some Montreal seasoning instead of salt and pepper. I added about a teaspoon of sugar for the acidity in the tomatoes. Let it cook for about 4 hours then added the tortellini and spinach this time. The carrots were still slightly crunchy so I turned up the crockpot for an hour. Unplugged the crockpot and added half and half and a little more basil. Grilled a slice of sourdough bread with butter and garlic seasoning and Parmesan cheese. Excited for my family to try this soup tomorrow. I might need to make another batch! Kale or spinach is great in this. Thank you for the amazing recipe!! Great for company! Xxxooo
I’m glad I didn’t omit the flour because it really adds a good amount of body which screams comfort food! I added coconut milk, roasted peppers and used meat tortellini and spinach and I doubled the recipe! Family of 3 we all went for seconds and thirds! The coconut milk makes it more fatty and gives it a fresh twist! Soo soo good!

Made this last night and it was PERFECT! I did add carrots and about twice as much chicken broth and tomato sauce because my packages of sausage and tortellini were larger than the recipe called for. My husband and I rarely agree on the soups we like, but this savory soup checked all the boxes for both of us. When I asked him this morning if he wanted to take some for lunch, he told me he woke up thinking about the soup. Now that is a real compliment from him!

This was absolutely amazing and will be added to my fall/winter soup rotation. I used spicy Italian sausage and also added red chili flakes to get some good heat as well as topped it with Parmesan cheese. So good. As other comments suggested, this is a recipe that can be easily manipulated to add other ingredients/veggies but I highly recommend just trying it as is first, its that good. I served it with warm, garlic rubbed crostini’s to dip in the broth.
Can this be made ahead and frozen if you leave the tortellini out? I was planning on making the broth/meat and freezing it. When ready to use heating it up in pot, once thawed and liquid tossing in tortellini, and cooking to directions. Has anyone done this? Would it work?

This is one of my husbands favorite soups. He requests it often. It’s delicious with his homemade sausage. I use baby spinach instead of kale as my husband is not a huge kale fan. But this is a fabulous recipe
This is absolutely delicious. I followed a few of the commenters suggestions and used the fire roasted tomatoes instead of the tomato sauce, and our local store only had chicken and bacon tortellini and it was yummy and I added the 4 carrots and 2 stalks of celery as someone suggested. I have doubled the ingredients, except for the meat, because of what I had on hand. My husband LOVES this soup and is always happy when I tell him it’s on the dinner menu. Our home is Sonoma, Ca. so wine is a must while making the soup. Love it and thanks for sharing.
This was amazing!!! I used baby spinach (that’s what I had, plus I’m not a big fan of kale). I bought mild sausage by mistake, so I added some red pepper flakes to add some heat. Fabulous!
This recipe is amazing! I usually add around double the tomato sauce so it’s not as brothy, and I make sure there’s enough flour to soak up the oil. Also, I’ll add Calabrian chili peppers and/or red pepper flakes for spice. Spinach also works as a great substitute for the kale.
This is possibly the best soup I’ve ever made. I mean really. Mind blowing good.
Only change I made was fire roasted tomatoes for tomato sauce.
Also, kale takes longer than 2 min to be tender. Other than that, perfection!

This is absolutely the most delicious thing I have ever made!!! My husband’s mouth waters every time I say I am making this. I’ve made this many time for family and friends and they all love it. I use spicy sausage i like the little kick it gives it. It’s so simple and good. Actually making it again today.
Fabulous and easy! Used mild sausage and added about 1/4 tsp of red pepper flakes with seasoning for a little kick. Separated tortellini so I could cook use some for dinner tonight and then left some uncooked to freeze with leftovers for next meal. Thank you.
I made so many mistakes making this it was as if I was trying to ruin it. No dice. Delicious! Can’t wait to try again with all the ingredients and make in proper order!
This was delicious. I followed most of the recipe. Here were my adjustments- I used 5 cloves of garlic, omitted the flour (seemed unnecessary) and I used a 28 oz can of San Marzano tomatoes, crushed them before adding. I used spinach instead of kale. Served this with warm Italian bread and it was a hit! Next time I’d add some crushed red pepper to the seasoning before adding the liquid. Or I could use spicy Italian sausage. Definitely add fresh basil! It adds a freshness to the dish. Could also garnish with freshly grated Parmesan
Full disclosure – I HATE cooking. I used to love it, but I have a very picky husband who over 42 years of marriage took the joy out of it for me. He dislikes nearly every ingredient in this recipe. But, we were both sick with a cold and I decided to try it anyway for myself. He absolutely LOVES this soup! SHOCKER!!! I had a bag of fresh kale and spinach mixed. I forgot to cut off the stems, but it didn’t matter. We ate this soup for three days straight. I don’t know if you can freeze the base and just add the tortellini, but if you can, I will prepare and freeze a lot of this for next winter. Anyone can make this – its easy. And if my husband likes it, everyone will.
This was DELICIOUS! I like it spicy so used hot Italian sausage and a can of fire roasted tomatoes with 1/2 can tomato paste! Will definitely make again! Thank you for such a great recipe!
I have been making this regularly for the past 3 years! It’s quick, easy and tasty. I use a bag of frozen kale.
Amazing soup. We started making this last year for neighbors who had Covid or bronchitis and it is our neighborhood miracle soup. Must be the chicken stock and garlic along with the yummy flavors but everyone swears they feel better after a meal of this with bread and fruit. It’s on our regular rotation and we never tire of it

Yes! I use Publix ground Italian sausage – mild or hot – both are great

This soup is SO good. I used spinach instead of kale and dried basil instead of fresh, but followed everything else exactly. It turned out perfect. My husband loved it and asked if I can make it again. Recipe instructions are also super easy to follow.

This soup is excellent! I have a house guest who is a vegetarian, so I used Beyond Beef Italian sausage, and veggie broth. I didn’t have tortellini and subbed eggplant ravioli. It was so delicious and perfect for a rainy, cold afternoon in DC. I will share this recipe with my book club. We’re always exchanging soup recipes.
Can you sub the heavy cream with full fat coconut milk?
Delicous! I subbed spicy chicken sausage for Italian and 8 ounces of fire roasted tomato’s for the sauce. Everyone in our family loved it!
This is my favorite. It gets better with leftovers too. Just add more broth for leftovers. A real keeper!
This is my favorite cool weather meal, and also a great one to share when bringing a meal to someone. I sub baby spinach for the kale. I also make a GF version for my son, using GF rotini in place of the tortellini (and subbing GF flour). Definitely a great recipe!
This was fabulous! I only made two minor changes (which is rare for me). Instead of tomato sauce, I pureed a can of Rotel and used that instead. I also didn’t have fresh basil, so I used a teaspoon of dried. This was comfort food at its best. We will definitely have this again. We don’t have a rotation as we’re trying new recipes all the time, but there are some that will make appearances again throughout the month. This will be one of them!
This soup is exactly what it purports to be: very quick and very delicious. I have also made it in a crock pot for thanksgiving so we could eat it all day!

I prefer more SOUP – so next time I might halve the tortellini and the sausage or double the “soup” stuff. SOOOO yummy. Also – used Chicken sausage and half & half to try to reduce calories a bit.

I made this creamy tortellini soup tonight. The soup came out as delicious as it looked. My daughter is very picky, and I got a dissatisfied look when I mentioned what I was making for dinner. She gave this recipe an 8 out of 10. I also delivered some to my neighbor, who is feeling a little under the weather. She gave it a 9. Way to go!

I am not typically one to leave reviews on things- but this soup is amazing. I have had to substitute the tortellini with Italian sausage ravioli a few times and it is divine.

This has become a regular in our meal plan! I do use less gr sausage then the recipe calls for and more tomato sauce. And I think kale not Spinach is a better choice! It has great texture and doesn’t get over cooked. Usually add more then suggested! Thank you for this wonderful recipe!
My 19 year old daughter made this but instead of sauce she used canned chopped tomatoes. So, so good, You’ll want thirds!

Delicious – i use it for a meal prep for either lunch or dinner – I about a cup or two of quinoa when I add the stock and tomato sauce (I usually up the tomato sauce to 14 oz to compensate for the needed liquid) so I can meet my dietary needs – delicious and filling – I also usually add a piece of crusty bread
SOOOOO good and perfect for a midweek winter meal. The first time I made it as written and my daughter and I each ate so much, we were groaning from being so full. The next time I made it a bit easier even then it is by using jarred spaghetti sauce to replace the Italian seasoning and tomato sauce. We like it spicy so I also used hot italian sausage. It is so worth making it though, one of or favorite go tos, especially when it is a busy sport filled night and you have to get dinner made quick.

Huge hit in our house! My son, who doesn’t like soup, loves it. Big flavor for such a short cooking time. I’ve made it twice now. First time following the recipe, except for the kale (substituted spinach) and heavy cream (substituted half & half with a pat of butter). Fantastic, as is! Second time added some mushrooms and a few shakes of crushed red pepper…for a little deeper flavor. Serve it up with some crusty Italian bread and a TJs Lemony Arugula Basil Salad Kit. This has become a family favorite. Weather turned cold again and I had to make this soup-again. Garlic bread and dinner is served. I’m sure we will be having this again soon.

Follow the directions as stated, but use sauté function for meat, onion, and garlic and add dry tortellini . Cook on high pressure for 6 minutes and slowly release pressure to reduce splattering. Add spinach and basil.

This was absolutely INCREDIBLE! My unofficial-food-critic father completely flipped for it and it will definitely become a staple in our house. Instead of scrambling the sausage, we cut it into rounds (after removing the casing). We also decided against draining the sausage once cooked and added a little white wine to the broth while the stock and tomato sauce simmered. We don’t generally keep heavy cream in the house so we subbed a half cup of half and half. Such an incredible flavour – instant favourite!

Fantastic soup that came together so quickly! My husband and teenagers loved it and asked that I only use this tortellini soup recipe from now on. My store didn’t have kale in stock so I used spinach. I made two pots of it with one being the written version that I doubled and another made dairy & egg free (Kite Hill vegan ‘cheese’ tortellini and Ripple oat milk half and half) for my child who is allergic. Both were outstanding. The leftovers went fast the next day. Definitely company and pot luck worthy as well. Yum!

This is a great recipe – one of my favorites. It’s very forgiving. I refrigerate the leftovers and bring them to work for lunch. It gets thicker and is somehow even more amazing.

You can’t freeze anything with dairy in it. I would make it and add the dairy as you reheat it. Don’t put the pasta in it either. Save that for the time you eat it as well.

I made this exactly per the recipe but forgot to drain the excess oil. it was absolutely delicious! I look forward to our leftovers! My husband says it’s delicious, he’s glad he ate it and its in his gut feeling great.
Delish! We made our own “Italian” sausage using ground turkey and Italian seasoning since my husband doesn’t eat red meat. Watch the salt (we only added it to our Italian seasoning cooked with ground turkey). Otherwise, the salt from the canned tomato sauce, the broth (we also used homemade) and the tortellini is plenty. A hearty soup for a freezing cold Pennsylvania night! If you love cheeseburgers, you’ll love this soup:)

This is THE BEST soup I have ever made. It’s like I ordered it from the restaurant. Each ingredient does its part and the seasoned broth alone is so flavorful. Store was sold out of tortellini so I used 3 cheese miniature raviolis. I too like others used cut up spinach leaves. Also added an extra can of broth therefore I added more half n half.

This was delicious. I used spicy Italian sausage, double the amount of tortellinis, and a little extra stock to compensate for the extra tortellinis. I will say, as other commenters have noted, the time estimate for this recipe is not accurate. I am a proficient cook, and I made this start to finish with no interruptions – it took about 45-50 minutes.
Disclaimer: I did not use Italian sausage because I didn’t have any and subbed spinach for kale (what I had).

Love love love this soup! It’s a hit so I think I’ll definitely be doubling the batch in the future. Followed the recipe exactly as written but subbed spinach for the kale (personal preference). One thing to note – it does get quite thick, so I might be adding a bit more liquid in the future to make it more soupy as opposed to stewy. Highly recommend!

This is delicious and easily modified. My grocery store was out of hot Italian sausage. So I did a 50/50 mix of sweet Italian sausage & chorizo. I omitted no the Italian seasoning because the chorizo was already seasoned. I ended up adding a little paprika & cayenne pepper. I was worried about the cream making the soup too creamy. It doesn’t. I’m very happy I added it. This is going to be a staple.

My daughter shared the recipe for this soup with me. I intended to make it as the recipe states but decided to tweak it like my daughter did by add zucchini, mushrooms and Rotel diced tomatoes to give it a little spice as my family prefers it that way. I actually found a similar recipe from Instacart while doing some grocery shopping. Funny thing is, I’ve always passed Tortellini in the grocery section at the store but was too hesitant to try it. So I bought it, and I made mine with spinach, spicy sausage, corn, canned diced tomatoes, a shredded Turkey leg, and I did add the flour but I didn’t have the cream so it was more brothy, but OH SO DELICIOUS! My God! One of the best recipes I’ve ever made. It came out so pretty!

I have made this twice since stumbling across your site about three weeks ago. My husband, who is the cook in the family, is not always thrilled when I decide to cook something. I first made this for a friend who is in treatment for cancer along with gouda grilled cheese sandwiches (on sourdough). Amazing! I did use half beef/half mild sausage and spinach instead of kale. For extra heart attack inducing deliciousness, I added 4 ounces of cream cheese while simmering and topped with shaved parm.

I searched the comments high and low for how to make in an instapot and I couldn’t find an answer so for answer so I tried it myself and turned out AMAZING!
I followed steps 1-3
Then put it in the instapot with the rest of the ingredients. (Not including the heavy cream or Kale)
Put it on high pressure for 5 minutes
Then added the cream and kale.
It was perfect and ready in 20 minutes.
Definitely already have requests to make it again.

This was SO good! Perfect for a chilly night and it was so easy! I added just a splash of white wine when I added the chicken broth and tomato sauce.
Next time, I’ll probably do 6c of broth instead of 4 since it thickened up quite a bit and I love a brothy soup!

A great recipe!! Did not have tomato sauce so used diced tomatoes that I drained. Have never a big fan of kale so I substituted Fresh spinach. Also used half and half instead of heavy cream.

Delicious recipe but I do have to point out that you list a 15 minute cook time. If the recipe is followed with the minimum cook times you’re at 22 minute cook time, not 15. Took me closer to 50 minutes to complete

I have never left a review in my life and I don’t even like sausage but this might be the best soup I’ve ever made. Absolutely delicious. I made it as is except I maybe didn’t use all the sausage and it was spectacular. It was so good, I burned my mouth and tongue because I refused to let it cool.
Loved it. I used spinach and it turned out excellent. Topped it off in the bowl with mozzerella.
I made this with a 6oz can of tomato paste because I didn’t have an 8oz can of sauce. I added 6 cups total of chicken stock (I love a brothy soup!)

The ONLY substitution I made was me being lazy, I had made up a huge batch of mini pork and beef meatballs the day before, so I saved about 3 dozen of those and tossed em in while the onions were sweating instead of the ground sausage.

I put a bit of a twist on this – I set out to make the exact recipe, but with a vegetarian daughter, I had to sub the chk broth for veg broth, and I used a homemade Ital sausage made with Impossible Meat. Something went wrong (but also right) at the point I added the broth; the “meat” began to break down, and thickened the liquid – a LOT. I added the tomato sauce, then followed the rest of the instructions. Ended up with an absolutely incredible tortellini w/”meat” sauce dish, nice & thick. I’m going to try this one again with real sausage, but if anybody wants to replicate my method, just add an extra tbsp or 2 of flour at step 3 for a thickener. Overall, great flavors in this!
I’m not usually a soup person but I’ve made this soup about three times since I found it two months ago – SO GOOD! I added just a pinch of chili powder to add a kick to it.
I used hot Italian sausage and red onion. This came out amazing!! My husband and I loved it. It made enough for each of us to have one hearty bowl for dinner and each of us one bowl for lunch the next day! I also topped with some shredded parmesan cheese. Will definitely be making this often!

My fiancé and I love this soup! It is one of the easiest and a go to dinner when we’re unsure what to make! I’m always sending his dad leftovers and he raves about it! I use spinach instead of kale and use more tortellini and stock than suggested. Sometimes I will add chopped mushrooms for a different flavor. Even in 90 degree summer weather this soup is 100% worth it!

Oh my goodness was this good!!! We made it camping and my entire family loved this stuff!! We used half mild Italian sausage and half hot which was perfect. My family is suspicious of anything green so I didn’t put any Kale in it. I’ve never had it before and am not really anxious to try it. I have however tried spinach and I like it and noticed a lot of people substituted that for the Kale so that’s what I did just serving it on the side for anybody who wanted it. It was a little crunchy since it wasn’t cooked, just the heat of the soup in my bowl but I still liked it. I forgot all about adding the cream til leftovers. We loved this even without the cream but I did use it on leftovers and it took it to the next level. Great job with this one!!!

This is our new favorite comfort meal. I never seem to have tomato sauce on hand, so I use whatever marinara or other pasta sauce is in the cupboard, and it has been fabulous every single time.
I made this once before, and it was a bit too rich for me. I decided to make it a second time because it really was good, but I realized I had no chicken broth. I instead used about 2 tsp of BEEF better than bullion instead of the chicken broth and wow, it was amazing. Made a whole batch and ate it over three days. Time to make another one!

Made it this weekend and it was absolutely delish! I doubled everything in the recipe except for the sausage (used lean turkey sausage) and subbed frozen spinach for the kale. Made enough to serve 3 for dinner – with 2nd helpings – plus 2 lunches and a container for the freezer. I had it for lunch today and I kind of wish I hadn’t stuck the leftovers in the freezer just yet. I’ll definitely be making it again.

OUTSTANDING! This soup is very easy to make, very delicious and could be a meal. I made it the first time w/chicken sausage and the second time, I used mild Italian sausages. Suggest adding more chicken stock than recipe calls for, as well as the amount of tomatoes(I used a 14.5 oz. can of diced tomatoes). The tortellini soaks up a lot of the liquid. Also add a half or three quarters of a cup of heavy cream.
We loved this recipe! I doubled the broth and sauce, and used quite a bit more garlic and tortellini, but everything else was the same. We will definitely be making this often.
This is currently our FAVORITE soup, and that is high praise coming from a finicky eater like my hubby. My sister passed on the recipe and after 1st taste I got the A-OK to make it again! It is so good and so easy – you have to try it! We don’t eat pork, so subituted chicken italian sausage or venison italian sausage we have made with beef. It has been tasty with both meat choices. It just might become your favorite as well!

I made this soup last week, and it is off the charts delicious! I made my own Italian sausage, which was pretty spicy, and it gave the soup a wonderful heat. I also made a batch without meat for my vegetarian college student and she loved it as well (I added a pinch of smoked paprika and crushed red pepper, some of the spices that were in the Italian sausage I made). This will definitely be on our soup rotation.

Loved this for a chilly weeknight! The only thing I wasn’t clear on was instructions for whisking in the flour. Was I supposed to push the sausage and onion to the side and just whisk the flour on the bottom of the pot by itself, without liquid? The sausage just clumped up in the whisk so this really didn’t make sense to me. I just gave up and stirred it all together with a spoon. Not sure if that was right but it still tasted great! Will definitely make this again.

I used ground chuck because I did not have Italian sausage. Could have used only 3/4# but no problem, just a lot of meat. Did not have kale so I used 4 ounces of spinach and it was just right. Did not have fresh basil so stirred in 2 tsp. dried basil at same time I stirred in the Italian seasoning. Husband raved about it and had 2 large servings. Once again this site did not disappoint. I strongly recommend this recipe if you like the ingredients. Even with my subs. due to need, it was excellent! I would like to thank you for providing me with such dependable recipes. This site is a 5* for sure.

This recipe is fantastic! I used sage bulk breakfast sausage in the recipe because that’s what I had in the fridge instead of Italian. I also used half and half instead of heavy cream for the same reason. It is wonderful! My last add was a 1/2 tsp of sugar for balance on the tomatoes.
I have made this soup at least a dozen times since I found the recipe about 1 year ago. We just love it! And I have made it for others and they love it as much as we do! I love soup and have been searching for recipes to add to my repertoire. This one definitely was added to my recipes. I made it exactly except i didn’t have basil on hand. My sausage was 2/3 sweet and 1/3 hot. It was delicious. Mine didn’t need any added salt or pepper – probably seasoned successfully from the sausage. Thanks for the great recipe.

This recipe received unsolicited compliments from my 16-year-old son and husband. The whole family loved it and asked that I double the recipe so there could be seconds or, at least, leftovers. My husband asked me to add this to our rotation and I am happy to oblige because it was so easy to make!
The only thing I did differently was sub in spinach for the kale. We aren’t big kale people, so I didn’t want it to go bad in the refrigerator when I know the spinach will get eaten in salads.

Man, this dish is freakin AWESOME! My 7 and 11 year olds loved it too, and they’re picky with a LOT of food.
I have fully veganized this recipe with beyond sausage, kite hill tortellini, veggie broth, and almond milk. I’ve made this several times and it comes out great every time. My whole family loves it.
I have a few veggies that needed to be used up before they went bad so I added a chopped green bell pepper and 2 zucchini to the soup once I added the chicken broth (I didn’t want the veggies cooked to death). It is a delicious soup! I’ll definitely make it again!

Might be the best soup I have ever made, and I am a soup kind of guy. Only change was we used regular sausage instead of spicy Italian sausage, because we were in the middle of a strong snowstorm and that was all we had. Could be the
storm added to the soups goodness too!
I have picky eaters who don’t like soup and everyone loved this dish!! I added extra tortellini (store only had big bags) so next time I will double the broth to accommodate. I have to eat GF so next time I will try it with GF pasta! Thanks for this amazing recipe!

One of the best “throw together” meals ever. I made minor substitutions, spinach for kale, dry tortellini for the refrigerator stuff (smaller size) and I topped it with Parmesan. This couldn’t have turned out better. Creamy, savory, hearty and delicious! Can’t recommend enough.

Absolutely my favorite soup to make and eat. Sometimes I use a basil, garlic tomato sauce to level it up. Have also made it without kale and it’s delicious.
I love this recipe. I’ve made it Multiple times. It’s so easy and quick. The perfect weeknight meal. My partner is vegetarian and it’s so easy to sub vegetable broth and beyond meat italian sausage. I also throw in a bit of red pepper flakes just to give it a little more spice.

Delicious! I’ve made Creamy Tortellini Soup multiple times & it just keeps getting better. It’s a new-ish favorite for my hubby & I, and frequently requested. I serve it with toasted Rosemary Olive-Oil bread and a glass of wine (of course!). Its very filling, and packed with flavor. Also – I use the XL package of Tortellini (20 oz?) instead of the 9 oz. standard. Love my pasta! There’s usually enough left-over for lunch / dinner the next day. Yum!

I liked this recipe a lot. I think it has a similar flavor to Lasagna Soup (from this Damn Delicious website). But since I like the lasagna soup so much more, I probably will only make that in the future when I want that type of soup. By the way, the lasagna soup from this website is one of my favorite soups of all time, so try it if you havn’t already! One other comment is that I am not crazy about wilted kale in soup. I love fresh kale, just not wilted in soup, so I would leave that out if I made it again…just a personal preference. Thank you again, Chungah, for all of your wonderful recipes!
Wow, this is a delicious recipe! And so easy!!! My husband was so impressed when I made this last night for the family. It’s the best Tortellini soup, or any type of soup, we have ever tasted. I didn’t realize I was out of tomato sauce but I crushed a can of diced tomatoes in a mini food processor and it turned out great. Also, I doubled the recipe and used one pound of hot sausage and one pound of mild sausage. It had the perfect amount of heat. Paired it with a nice merlot and some country french bread. Just made this recipe. Used chicken seasoning to replace chicken broth and mixed 40z of cream cheese with 1/3 cup of milk. Substituted pork for ground turkey and spinach for kale. It turned out great. Thanks for the inspiration.
There hasn’t been a recipe of yours I haven’t loved!!! This was wonderful and certainly no exception. Quick and easy but SO full of flavor. I stuck pretty closely to the recipe as it was. I added some minced baby Bella mushrooms when I added the onion and garlic. (Only minced them since I sometimes have to hide things in our meals for certain noses not to turn up!) My husband “doesn’t like soup” so I doubled the tortellini and then added a cornstarch slurry at the end. And for not liking “soup” he ate two bowls! Thanks for a new go-to!

I used M&S Italian tomato sauce. In the States would use di Napoli, the simplest one they have.

Absolutely loved this recipe! We couldn’t get the three cheese tortellini so we substituted with ricotta and spinach and it was still amazing. The Italian sausages really give it that great flavour. Everyone in our house loved it, was so easy to make. We will definitely be making this again!

Delicious! I improvised during the quarantine. Substituted hot italian turkey sausage and added a diced yellow pepper and a can of fire roasted tomatoes. Baby kale wilted nicely then topped with a little grated parm!

This was amazing! I doubled the recipe because I have a large family… except I needed to use 2.5lbs of sausage, and an extra tbsp of flour for thickening. I also put fresh spinach instead of kale because I am not a fan of kale and also had to put 2.5 the amount in.
I didn’t wait until the tortellini was fully cooked… a teensy bit under cooked, but no one noticed. I did this so that when we warmed it up the next day the noodles didn’t get soggy, that worked perfectly. And the next day was even more amazing!

I have made this soup many times and it is one of my favorite soups EVER. But can someone please explain to me step 3 (“Whisk in flour until lightly browned, about 1 minute.”)? How do you whisk dry flour into a heap of onions and dry seasonings? When I do this I just get a huge pasty clump until I stir in broth. Is that correct? Or am i missing a step? Thank you!
I sprinkled in one tbsp at a time, mixed well, then added the next… it is supposed to coat everything and act as a thickening agent after you pour in the wet ingredients. This method worked perfectly. Though it never really “browned” and once everything was well coated, I moved onto the next steps.
The reasoning is to cook the flour long enough to lose the flour taste. And yes, you did it correctly.

I used Sweet Italian Sausage and I have used Kale or Spinach to make this recipe. I also added Dill Weed to the part where you add the Italian Seasoning. My boyfriend loves when I make this and it is one of his favorites.
We love this soup recipe and make it all the time. Sometimes we swap kale for spinach or use leftover marinara instead of the tomato sauce. Always a hit!

This is a great soup! I did some major adjustments to the recipe but it was still totally yummy. I used red chard instead of kale and I omitted the cream completely. I added carrots, zucchini, and celery and doubled the chicken broth. It was amazing!

I doubled the recipe and used hot and mild Italian sausage and spinach instead of Kale. This is a definite favorite. My husband and 15 year old loved it and had second helpings. I took some to lunch the next day…I needed to add a little chicken broth for leftovers because it does thicken up but it was absolutely delicious! I added crushed red pepper to my soup for a little kick, but not the whole batch. I highly recommend!
This has quickly become a staple in our house — and I need to make a double batch (for 2 people!) if we want it to last more than a day.
I swap out the sausage for bacon. Usually about 4 pieces and I cook the onions in the fat. I chop up the cooked bacon and add it back right before serving.
You can get away with about 1/4 cup of heavy cream. I usually just eyeball it and taste it until it’s perfect and it’s well below the 1/3 cup.
YUM! We subbed basil for the kale, and ground beef with spicy Italian seasoning for the pork Italian sausage – excellent! I have made this at least once a week since first trying it about a month and a half ago. We rarely have leftovers because it gets devoured, but the couple times we have had leftovers, it’s gets better the next day. Thanks!

I am so happy I found your recipes. 2 for 2 now. Made this last night and it was delicious. Warming, full of flavor, and surprisingly not too heavy considering the cream and tortellini. Another quick, easy, and delicious option for a week night meal…especially during these colder days.
I used what I had on hand, so in case anyone else is interested it tastes great if you substitute the sausage with ground turkey. I just browned up the ground turkey with onion and garlic and heavily seasoned it with italian seasoning and smoked paprika. I didn’t have kale so I used baby spinach.
Whether you follow this recipe as is, or have to make some substitutions, you won’t be disappointed.

I’ve made this before with regular Italian sausage. It was good enough for me to make again. This time I used hot Italian sausage (it’s what I had). It did add a little something extra for me. It’s a simple fix. The sausage is not a big deal. Use what you have or what you like.

This looks delicious. I haven’t made it yet because I have a question. Can this soup be made ahead of time minus the tortellini and then be warmed up and tortellini added in a crock pot? Have 15 ladies coming over for a luncheon and I’d love to serve this soup.

Made this just today, and we love it. Easy to put together. I could not find frozen tortellini so I bought the packaged ones. This took an extra step, but it was well worth it. This is a thick hearty soup. I was thinking about thinner in down, but my son loves it the way it is. A bowl of soup and some bread, this is hearty dinner. I’m a terrible cook and this was very good! I added too much salt (my fault) and added some extra cream and water at the end to fix that. I wouldn’t add any extra salt in the future (even though I used no salt added sauce). Next time will use spicy sausages and better tomato sauce for more flavor.

I don’t see why not. Most soup ingredients are interchangeable and can be easily substituted to suit your own taste. If you’re looking for somewhat of a similar soup that uses ground beef, look up IP lasagna soup.

Scrumptious! This soup was absolutely amazing, thanks so much. I have been eating it for three days, and other than the tortellini having soaked up much of the liquid, it is still delicious. I am going to add some more chicken broth, right now it eats like a stew. Super hearty and soooo tasty.
This is a great recipe. It’s easily changed depending on what you may have on hand. I use frozen tortellini in a pinch, and I’ll throw everything into the crock pot for an hour to simmer. My favorite variation is a hearty primavera loaded with tender veggies and a hearty sauce. You can add some wine to give it an extra kick.

This was sooooo good! I liked that it only used a small can of tomato sauce so it was a lighter creamier tomato taste. I substituted the kale for spinach and added some freshly grated parmesan cheese to it. Delicious!! It will be a new regular go-to recipe for me.
This recipe was DELICIOUSLY good! I was a little concerned about my sauce not thickening, but once I put into bowls and served, I realized it was just perfect. If you are feeding a family of four or more, I’d recommend using a family size package of tortellini (I have a husband and two boys in the house). Three of us are vegetarians so I omitted the sausage altogether and it was absolutely divine. I also substituted kale for spinach. My husband, a huge meat eater, is such a champ when it comes to eating vegetarian, however, for this meal, I cooked chicken chorizo in a separate pan and added to his bowl once served – he LOVED it!

I’m in high altitude so most of my liquid evaporated.. lol it turned out a bit more like a goulosh, but none the less.. my husband informed me that it’s the most delicious soup he’s ever tasted. I thought it was pretty good too, but next time I’ll add an extra cup of broth.

Yummy combination of fresh ingredients to warm up on a cool late summer evening. I made my own tortellini stuffed with homemade lemon farmer’s cheese.Instead of kale I used arugula. The lemon, basil and tomatoes with the arugula was light and refreshing!

Thank you for this recipe! We love it. It’s on our regular rotation and ends up on our table at least twice a month — even in the summer. It’s over 100 degrees where we are right now, but this is still a go to. I have also made it in the slow cooker by doing steps 1-4 on the stovetop, then transferring to the slow cooker for a few hours on low, then completing steps 5 & 6 about 30 minutes before we eat. Works great when everyone is coming home at different times to eat. Almost always use spinach because most of our kale goes to feed our desert tortoises. 🙂
Was great! We used turkey sausage, and I added some celery salt. Everyone loved it including my 2 toddlers! instead of kale we used a little bit of spinach and extra onions.
I love all of your recipes because they work as such a great jumping off point / can easily alter them to what you have on hand. I am not a fan of kale / and I don’t really enjoy having to cut off all the stems off spinach (I don’t like the stems) – so I make this recipe as described, but substitute broccoli instead of the greens and it’s fantastic. Green Giant sells a “riced” broccoli that is perfect in this soup.

I used chicken sausage along with geound chicken sonce i had a bit of both on hand and didn’t want to run to the store. I also substituted tomato sauce with diced tomato (ran out od the sauce) and i have to tell you it waa delicious. Ohh and instead ok kale i used spinach.. it was one of thise what do i habe in the fridge kinda night. Absolutely delicious, easy amd yummy. My 4 and 2 yr old kids loved it. Thanks foe the recipe.

Made this or supper the other day. My kids didn’t like it at all which I was surprised about because they usually love all soups. My husband liked it a lot which was also surprising because he doesn’t like any soups! We kept the leftovers in the original pot in the fridge overnight and ate the leftovers the next day. It almost turned into more of a pasta with sauce with the tortellini soaking up some of the liquid. Tasted great! Used spinach instead of kale but other than that followed the directions exactly.
I made this tonight and got rave reviews from my family. Even my son who doesn’t like tortellini liked it! I made it as written but threw in a 15 oz can of tomato sauce instead of 8oz because that was what I had and didn’t want to throw it out. I also added some Better than Bouillon to taste at the end for extra flavor. This one’s a keeper!

This soup IS IT!!!! It was cold and rainy today and I was craving soup but wanted something really simple since I didn’t want to fuss too much after work. I came across this recipe and it was the perfect choice! I doubled the recipe because I wanted leftovers for lunches the next few days. I also added some sliced mushrooms and red pepper flakes to give it a little kick. The recipe is easy and really tasty! I also think it’s a great base to work with for adding other/different vegetables and proteins. I’m definitely looking forward to my lunch the next few days!

Excellent recipe! I added a little more tomato sauce than called for. We added crushed red peppers and used chopped spinach instead of kale. We can’t wait to make it again! It’s a keeper!!
Ooooh so tasty and so easy!!! I had all the ingredients in my pantry and fridge. I used Trader Joe’s mini tortellini and cooked directly in the soup which actually thickened up the soup to the consistency to my liking. Thumbs up!!

I made this recipe for my entire family and they gobbled it up. So delicious and easy to make. The only thing I may change next time will be to add a little more chicken stock since there is a lot of substance to the meal. It hit the spot without feeling overly full.

I made this soup for a friend who was having a baby. We did a make-ahead meals shower. She told me today that it was delicious and packed a lot of flavor! It makes a pretty good-sized batch of soup, so it was shared with their family for a baby-meeting party! I tasted it before putting it in a large, flat storage container and freezing it. I was impressed with the bright, lighter flavor of the soup. It isn’t heavy but it is filling. It was served with crusty bread and a salad dressed with lemon and oregano. I have had several requests for it and I made a batch for us, too. It will be on the regular rotation now. Thanks, Chungah!

This is a delicious soup for a chilly evening. My husband doesn’t care for kale or garlic. Too bad, Minnesota boy! I threw everything the recipe called for in there-he devoured 2 bowls. I did use half and half, no salt tomato sauce, and low sodium chicken broth just because. Crusty French bread served with-loved it.

Delicious…as usual. I used baby spinach, spinach and cheese tortellini, no added salt or pepper. Made exactly as stated and it was perfect. Made enough for 2 meals for 2 people. I serve a little salad and a little crusty bread with it. This is a real winner. Thank you.

I made this 2 times this month. It’s amazing!!! I did change it up a bit I subsituted the italian spices and tomatoe sauce and replaced it with a jar of Rao’s marinara sauce and replaced Kale with Spinach. I made a double batch and froze half and it reheats wonderfully. YUM!

THIS IS MY NEW FAVORITE SOUP! I used bratwurst instead of Italian sausage, but made sure to really load up on the garlic/Italian seasonings. Also, some chili flakes brought this soup from a 8/10 to a 10/10!!!! A small amount of kick really accentuates the flavors. I also recommend adding the kale before the tortellini… i found that the tortellini really drank up a lot of my broth, making this realllly thick. Next time, I want to add in mushrooms!
Make sure to top with Parmesan and dunk a nice piece of crunchy baguette in this! 🙂 Amazing!

Tried this in the Instant Pot–I made it through step 3 in a cast iron, then added that + ingredients in step 4 to the IP on high pressure for 10 minutes; also cooked tortellini in the broth for an additional 5 min @ high pressure–and it was excellent. I also added a touch of fresh lemon juice at the end because I prefer a little more acid. Will definitely be making this again!

As soon as I saw this recipe I got the ingredients to make it for lunch! I put spinach instead of kale, used fat free half and half instead of cream, and put a dollop of mascarpone in at the end. OUTSTANDING!

I don’t rate recipes that I try as often as I should. This recipe is definitely 5 STAR and one I will make again and again. It was perfect for the snowy night we are having in western Washington. The only two, minor changes I made was adding a picnic of sugar and using baby spinach vs. kale.

You can simmer for longer, if you prefer, but I recommend holding off on the tortellini, kale, heavy cream and basil until right before serving.

Made this for my husband tonight and it was Amazing! The only substitutions we made were that we used full fat coconut milk in the can instead of heavy cream because we don’t do dairy and we used a combination of baby kale and arugula. It was delicious!

This soup was fantastic! I subbed the Italian sausage with ground turkey and heavy cream with half-and-half to lighten it up slightly. Also, I added the tortellini with the broth and tomato sauce and cooked it in the Instant Pot for 4 minutes, then added the kale and half-and-half. Turned out delicious!

THIS REMINDS ME OF THE SOUPA TOSCANA from the Olive Garden by removing the tomato! It is outstanding, and to make it a bit less fattening I use half n half, and a bit of parmesan cheese! I can have as much as I want!!
