Loaded with flavorful chunks of meat + potatoes that come out amazingly tender. Truly the BEST beef stew recipe ever!
I wish I could say I made this in preparation for St. Patrick’s Day this weekend, but I didn’t.
Because as I’ve mentioned before, it’s kind of cold in Southern California. Like 60 degrees cold. So my routine hasn’t changed at all.
I’m still in my no-shame sweatpants with a cozy bowl of comfort here. Loaded with tender chunks of meat and potatoes that just melt in your mouth.
I’ve had 4 bowls already with crusty bread, so I should probably leave the house at some point to work this off.
Side notes:
If you can’t find baby Dutch yellow potatoes, you can substitute any kind of potatoes. I just prefer the former as it holds up a bit better in the Instant Pot.
If you don’t have an Instant Pot, you can try this slow cooker version instead.
Instant Pot Beef Stew
Ingredients
- 1 ½ pounds stew meat, cut into 1-inch cubes
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 1 pound baby Dutch yellow potatoes, cut into 1-inch chunks
- 4 carrots, cut diagonally into 1/2-inch-thick slices
- 4 celery ribs, cut into 1/2-inch-thick slices
- 3 cloves garlic, minced
- 4 cups low sodium beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ¾ teaspoon smoked paprika
- 1 teaspoon caraway seeds, optional
- 2 bay leaves
- 4 tablespoons all-purpose flour
- 1 cup frozen petite peas
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Season beef with salt and pepper, to taste.
- Set a 6-qt Instant Pot® to the high saute setting. Melt butter; working in batches, add beef and cook until evenly browned, about 2-3 minutes.
- Stir in potatoes, carrots, celery, garlic, beef broth, tomato paste, Worcestershire, thyme, rosemary, paprika, caraway seeds and bay leaves until well combined; season with salt and pepper, to taste. Select manual setting; adjust pressure to high, and set time for 30 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions.
- In a small bowl, whisk together flour and 1/2 cup stew broth.
- Select high sauté setting. Bring to a boil; stir in flour mixture and cook, stirring frequently, until slightly thickened, about 3-4 minutes. If the mixture is too thick, add more beef broth as needed until desired consistency is reached.
- Stir in peas until heated through, about 30 seconds.
- Serve immediately, garnished with parsley, if desired.

My first attempt at beef stew in the instant pot!

I’m volunteering at a hospital in rural Kenya, but I was able to find most of the ingredients for this recipe and had purchased a generic Instant Pot in Nairobi. This beef stew was so delicious, even though I just filled it with all of the vegetables that I could find. Thank you!
As ALWAYS…Damn Delicious does not disappoint. This stew is lovely!! I followed the instructions…no changes. It is easy and so delicious. I paired it with my own homemade biscuits (I love to bake…cook not so much). I love InstaPot recipes.
Absolutely love the recipe, but sure would love someone to tell me exactly how they prep all this in 15 minutes. I’ve made this dozens of times and it takes me over an hour to wash, peel, and cut the vegetables, and to cube and brown the beef. And I’m no newbie to cooking. Are people using a food processor, or some other kitchen gadget?

I make this all the time. I modified to my liking. I replaced one cup of stock with a good red wine. I double the tomato paste and also add a sautéed onion and small container of crimini mushrooms sautéed. I use 2 1/2lbs of stew meat and 1 1/2lb of potatoes. This recipe is the best.
I am always leery of just adding flour to broth, so I took the 4 tb of flour and made a roux with 4tb butter. Added the cooked broth to that and then added it back to the IP after it was thinned out. Worked great, had a great classic beef stew flavor. Thanks for the recipe!

Very yummy, I left out the rosemary and bay leave, added a diced onion, I used sirloin ( didn’t have stewing beef). Used come tastefully simple steak seasoning, excellent flavor,

This was an intriguing recipe for me as it had caraway seeds and I always have put allspice into my stew. Sadly, the caraway seeds and the bay leaf gave this an unpleasant flavor for me.
I will use this recipe again but leave out the above. Thanks for such a great food blog.
Love this! I make this about once a month and I always make sure I have the ingredients available. I leave out the bay leaves and caraway seeds (just things I never have at home), and follow the instructions exactly. Always turns out great

Really delicious stew, the family went back for seconds. I peeled and chopped up 6 regular white potatoes (instead of the baby Dutch potatoes) and they kept their shape and cooked throughout. For beef broth, I used one Campbell’s Beef Broth 900 ml box and added in 4 tablespoons of beef Bovril. Substituted the tomato paste for 4 tablespoons of crushed tomatoes. Used regular paprika instead of smoked. Used 3 bay leaves for a stronger flavour. I put all of the meat in at the same time and added in one diced onion and sauteed it all together. To make it easy for thickening rather than trying to dig out the liquid from around the vegetables, I simply mixed water and cornstarch in a cup and slowly stirred it into the stew when I added the peas at the end. It worked perfectly.
Our favorite beef stew yet! So delicious and easy to make. We skipped the tomato paste and added a can of diced tomatoes instead, and added a bit more flour for thickening. We also always add a packet of onion soup mix – so good! Served with crusty bread and butter. Thanks for an easy and delicious dinner! We will definitely be making this again!
Excellent recipe! Added shallot, green beans, and a little corn. I used a nice chuck roast, carefully separated, trimmed, and cubed. The overall flavor was delicious, and each bit a tender delight. I left out the salt, celery and potatoes, diced the carrots and served it tossed with buttered pasta, and a pinch of salt. Used the Instant Pot for the stew. Everyone loved it. Easy recipe, thanks!
Your recipe looks delicious. Especially like the addition of caraway seeds yum. Question.. Do you have to sauté the beef or could you dump and go? Would it change the cooking time?

Wow. This is the best stew I ever ate. I was a little skeptical (no onions? smoked paprika, and caraway seed??) but I’ve made enough Damn Delicious recipes to trust your judgement! So I followed the recipe to a T. I was lucky to have a beautiful chuck roast to start with, which I cut up for stew meat, but the broth was the real star. All the flavors melded beautifully, it was hard to stop eating. YUM. This is my stew recipe from now on.

I have the 3 qt instant pot so I cut the recipe by 1/4.
•3 cups broth and 1 lb meat; adjusted ingredients accordingly.
•1 can fire roasted tomatoes with garlic in place of tomato paste.
•I added the flour and stirred after I added the vegetables before the broth.
•Did not use caraway seeds, bay leaf not parsley.
I’m trying this today. I noticed you said to add the onion but I don’t see the onion listed in the ingredients. Just giving you a heads up.
The best, most flavorful beef stew I’ve made, a real stunner. It was a hit with my picky eater in-laws as well. The addition of caraway adds something. It’s a secret weapon I use often, but had not yet thought to put in beef stew. I also love the addition of peas.
I have an 8-qt Instant Pot. Would that make a difference in preparation or cooking time?
Hi Monica! When using an 8qt Instant Pot, the timing should stay relatively the same. It would just take a little longer for it to come to pressure. But as always, please use your best judgment when making substitutions and modifications.
OMG this is so good! It was the broth that really stood out. I substituted a small can tomato sauce for the tomato paste and omitted the paprika. All the spices made a difference. Be sure to use beef cooking stock and not beef flavored broth.
Perfectly seasoned stew!!! Loved it! I did substitute venison because that’s what I had on hand, and it was fabulous!
This recipe is easy and delicious! I substituted fresh green beans for the peas and added those in with all the other vegetables. Instead of flour I used cornstarch and mixed with some of the broth and it worked just fine. Husband gave it two thumbs up! Thank you for posting an excellent recipe!

Made this last night as my first attempt at the Instant Pot. It was perfect. I love a good beef stew and now I love a good beef stew in under an hour. I did watch a few youtube videos on using the Instant Pot, so that did help me to feel a bit less intimidated. Turns out, it’s pretty easy and damn delicious to use an Instant Pot. Very good stew. I was worried the vegetables would be mush but they weren’t. Meat was wonderfully tender. Next time I make this, I will use a large skillet on the stove top to brown the meat. I had to do several batches in the instant pot and it took too long.

This was my first time using this recipe and it was really good. I’m new to my instant pot and the only complaint I have is the smell that lingers after I make something. I’ve emailed the company and they suggest using 2 different sealing rings, one for sweet and one for savory. Thought I’d pass that on. Thanks for a great recipe that I’ll come back to!

Don’t worry about taste transfer- with the sweet/savory exception I haven’t had an issue. The ONLY trick that ever worked for me to get the smell out of the ring was hanging it in the sun (on a dollar store plant hanger!) but in the winter I haven’t bothered. No issues. Others use different cleaning tricks with lemons and all but I didn’t think they worked. Just some more food for thought on the topic!

Divine Beef Stew Recipe!
Have had my Instant Pot for a few days, and this was the second dinner dish I made. Normally I don’t cook because of a demanding job, but was home sick for several days with a cold.
What a healing comfort dish! This beef stew was just the way I imagined and hoped for it to turn out in taste and texture, with just the right thickness of stew broth too! I didn’t use caraway seeds and ran up a little short on rosemary, so subbed partly with fresh orgegano. Yum!!! I wouldn’t change a thing about this recipe. It’s absolutely perfect as is.

This is my second time making this. The first time I made it, I did it exactly (with the caraway too), but found it too liquidy, so this time I cut the beef broth to two cups and it was perfect! So delicious!

The only reason I used corn starch instead was because I didn’t have flour on hand.
I’m a bit of a beginner with the Instant Pot. I read somewhere that it takes at least 1 cup of liquid before it comes to pressure. I noticed the brorh is added after the vegetables are sauteed.
Do the vegetables produce enough liquid (1 cup) while sauteeing them to allow the pot come to pressure? Just wondering

I made this stew and it was wonderful. The only change I had to make was using corn starch instead of flour to thicken the broth.

Do you cook the peas prior to putting them in the IP, or do you put them in frozen?
No, they do not have to be cooked beforehand. You can add the peas into the Instant Pot in its frozen state.
Just made this for St Patrick’s day. Made it 99% to the directions with the exception of a bit more beef. All I can say is this is one of the best stews ever. IP has a huge following with a lot of sub par or untested recipes, this is spot on. We had so many people over that I had to make to twice. (Put the first batch in a slow cooker (CP) to keep warm). Taste and tenderness is excellent, all in about an hour vs 8-10 hours with a slow cooker.
I don’t need an Instant Pot, I don’t need it, I don’t need it!! I have enough kitchen appliances and too little counter space. You’re making it too hard for me to resist buying one!! Lol.

Look, I am an adult male (67 years old) and not at all a genius in the kitchen! But this little appliance just makes EVERYTHING I cook over the top! My friends actually brag about the dishes that I now make with my Instant Pot! And that was not the case before!
So, Blossom, get off the pot (no pun intended!) and get yourself an Instant Pot! I saw the 6 qt DUO model at Walmart over the Christmas holidays for $75.00, that is way less than I paid for mine on Amazon 4 years ago!

Where does the high salt content come from? It looks great except for the high salt. Is it all from “season to taste” ?
The beef accounts for 263mg, the potatoes accounts for 126mg and the salt and pepper accounts for 155mg. I also recommend using low sodium beef broth. This has 36mg per half cup when the “full sodium” beef broth has 446 mg.
Thanks that answers my question. So most of it is from natural incurring salt in the beef and potatoes. Never thought of that. I made it and it is the best homemade beef stew I have ever had. It has the right spices that I love and the instant pot makes it to perfection. I added just a little more of the low sodium beef stock. We have eaten from it two times and have enough left over for a last meal. The green peas worked out great for St Patrick’s day… a bonus! Keep those recipes coming. I love the simplicity of what you cook and very few ingredients that are hard to get.
Hi, I am a big fan of pot meals. I noticed that the sodium level is very high. Is there a way to reduce, ala low sodium ingredients or would this compromise the stew.

This was so good! All the potatoes disappeared though, and there’s was way too much gravy. Next time I’ll cut the broth in half and use whole baby reds.
