Lo Mein Meal Prep

Save time, money and calories when you prep for the entire week! Made SKINNY with whole wheat spaghetti and chockfull of veggies!
I know.
It’s not fair to be posting any kind of meal prep recipes right now.
As I’ve been eating all sorts of fried street food.
Like these churros with soft serve ice cream.
Or these egg breads by the dozen.
Or a 32 cm soft serve ice cream cone.
But the minute I touch down in LA, I’ll be on a mission with these boxes.
Its my favorite lo mein recipe made a little bit skinnier, loaded with even more veggies. And the noodles are swapped out for whole wheat spaghetti.
Of course you can use your noodles of choice.
But you might as well cut down on the calories where you can.
I promise.
You won’t taste a difference!
If you do, I’ll hand deliver one of those churro thingies.
Lo Mein Meal Prep
Ingredients
- 8 ounces whole wheat spaghetti
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 cups cremini mushrooms, sliced
- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1 cup snow peas
- 3 cups baby spinach, chopped
- ½ teaspoon sesame seeds
For the sauce
- 2 tablespoons reduced sodium soy sauce, or more, to taste
- 1 tablespoon freshly grated ginger
- 1 teaspoon honey
- 1 teaspoon sesame oil
- ½ teaspoon Sriracha, optional
Instructions
- In a small bowl, whisk together soy sauce, ginger, honey, sesame oil, and Sriracha, if using; set aside.
- In a large pot of boiling water, cook noodles according to package instructions; drain well.
- Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes.
- Stir in spaghetti and soy sauce mixture, and gently toss to combine.
- Place into meal prep containers, garnished with sesame seeds, if desired.

Easy and yummy. I doubled the sauce, used lo mein noodles, subbed broccoli for mushrooms, subbed edamame for snow peas (store was out of snow peas), and then I added water chestnuts and chicken. Will definitely make this again.
Made with broccoli instead of mushrooms and doubled the sauce. Delicious!! You can add chicken or any veggie you like to change it up a bit. Will definitely make many times.
Very delicious meal, I substituted the mushrooms with broccoli and was really good. It does need a little more sauce, but the flavor of the sauce is great. Will be making again, my kids loved it.
WOW. This recipe is simply delicious. It will be a new favorite on the weekly menu.
This was really yummy with all of the veggies. I didn’t mention the whole grain spaghetti and nobody in my family (including me) noticed the difference. I doubled the sauce and it was great for us. I may have used more than 8 oz of spaghetti. I didn’t measure exactly. I’ll definitely make this again!
I made this for my husband’s work lunches. He works hard and eats hard, so I doubled the recipe. Also, I subbed broccoli for red bell peppers because he finds bell peppers too slimy for his taste (and he loves broccoli). It’s not as colorful without the red, but he’s not complaining!
I personally hate veggies, but even I have to admit that it smelled awesome when I was cooking it up. The garlic makes it. Also, I added some Taco Bell Diablo sauce to the dressing, and he seems to like it.

I didn’t do this for meal prep, but I made it for a healthy dinner tonight. This is really, really good, and so versatile. I added spiralized zucchini because I had some that needed to be used up, and some cooked shrimp because my husband does daily workouts and needs the protein. The sauce is so good that my veggie-hating 12 year old actually ate some plants. He asked for leftovers for lunch tomorrow! The prep does take a bit of time, but after it’s all said and done, the meal comes together really quickly. Will definitely be making this again. Thanks!

The sesame oil you used in this recipe is regular and not toasted, cortect?
Either sesame oils should work just fine in this recipe. 🙂

Yes, it should work. But please use your best judgement when it comes to modifications!

Does this freeze well?
Freezing sounds like an amazing idea but unfortunately, I cannot answer this with certainty as I have never tried freezing this myself. Please use your best judgment for freezing and reheating.

realistically, how long will these stay fresh and tasty once prepped?
A few days at least but as I am not an expert on food safety, I cannot really say with certainty. Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. Hope that helps, Angel!

What can I use instead of oil in the sauce.

Why the special containers if you don’t freeze it?
The special containers are used for meal prep. This is not meant to be frozen but consumed throughout the week. You prep your meals for the week ahead to save time and money. 🙂
Which is great especially if you have kids!
Can I freeze this meal?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
I don’t have fresh ginger on hand- how much ground ginger can I substitute?
The ratio for dry to fresh spices is typically 1:3. Hope that helps!

Can you use olive oil in place of sesame or another type I may already have on hand?
Yes.
Bear in mind that sesame oil adds to the asian flavour of the dish, and olive oil doesn’t 🙂

I personally prefer to eat when warm.

Haven’t mastered grating the ginger.

You can grate ginger by using a paring knife to cut the skin off. Then using a zester, simply grate the ginger. You can store any leftover grated ginger.
I store my leftover ginger in a Ziploc bag in the freezer.
Peel ginger with a teaspoon (try it!!) and then grate or chop finely. Leftover ginger with lemon and honey makes a great tea!
This recipe is perfect as is, although I add other veggies that need to be used up including broccoli. In our weekly rotation! Delicious, filling, healthy! Thank you! ❤️
You can also use the recipe builder on the Weight Watchers website. Type in the recipe, and it will give you the Smart Points per serving.

There is a function on the WW tracking page in the top right corner called “CREATE” and under that select “RECIPE” and it lets you add ingredients and choose number of servings and it calculates the points for you.
