Korean Beef Bowl Meal Prep

Tastes like Korean BBQ in meal prep form and you can have it ALL WEEK LONG! Simply prep for the week and you’ll be set. EASY!
I’m baaaaaaack. And back on meal prep, unfortunately.
Well, it’s not unfortunate. I just miss the mardi gras colored dumplings. The churros with soft serve ice cream. The Hello Kitty dim sum. The 32cm ice cream cone.
But hey. These meal prep boxes. They come to an obvious close second.
They are such comfort food for me right now, except they are perfectly portioned with brown rice, sautéed garlic spinach, and some eggs for added protein.
It’s a full meal without getting you to overeat, or lead you to a food coma mid-afternoon.
And you know you can always swap out the ground beef for pork or chicken, or even crumbled tofu for a meatless version.
And I won’t be mad if you snuck in some veggies to the ground beef like carrots, bell peppers, zucchini, etc.
I won’t be mad at. all.
Korean Beef Bowl Meal Prep
Ingredients
- 1 cup brown rice
- 4 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups chopped spinach
For the Korean beef
- ¼ cup brown sugar, packed
- ¼ cup reduced sodium soy sauce
- 1 tablespoon freshly grated ginger
- 2 teaspoons sesame oil
- ½ teaspoon Sriracha, or more to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 pound ground beef
- 2 green onions, thinly sliced
- ¼ teaspoon sesame seeds
Instructions
- In a large saucepan filled with 2 cups of water, cook rice according to package instructions; set aside.
- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain well and let cool before peeling and slicing in half.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in spinach until wilted, about 2-3 minutes; set aside.
- In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and Sriracha.
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
- Place rice, eggs, spinach and ground beef mixture into meal prep containers, garnished with green onion and sesame seeds, if desired.

Hey Chungah! Thanks for sharing your awesome Korean Beef bowl. This reminds me of the Japanese beef bowls I had in Japan. I’m eating it as I type 😉 It’s delicious and I love the punch of the ginger so healthy and refreshing! I added a few scoops of Kimchi and the sesame seeds on top and it made it so good 🙂 This might be my week day rotation as it’s so easy to prep too.

This is my top meal prep recipe of all time. I make it once every month or two. I use Jasmine Rice instead of brown rice. I recently started sauteeing mushrooms and adding them as well, so good!

Thank you! This was excellent! I want to post a pic but don’t see where to do it. I skipped the rice and put the meat (ground turkey) in a romaine cup. The extra juice from the meat I poured on the spinach. Will definitely make again.

I just made it yesterday and it not make it spicy at all. You use so little. Its basically just for flavoring.
I tried this, taste was amazing.
THIS MEAL PREP IS SO GOOD! So for my first time I followed it exactly except doubled the spinach. Weight Watchers came out to 14 points using Lara’s Lean Ground Beef.
Next time, I am going to use less brown sugar and eliminate the olive oil when cooking the ground beef. That way I can get points down to 10.
But this recipe is so good for those who need a great easy meal prep or makes little substitutions/eliminations for a healthy one!
Used a 1 lb box of fresh spinach, a bit more than 4 cups, but otherwise followed recipe exactly – delish. Very satisfying lunch, definitely a repeat. Thank you!

My husband loves and I do mean LOVES this dish. He’s asked me to make it 3 nights this week. It is delicious and I’m happy to make it again. For me its a bit too sweet so I will reduce the sugar. Just a personal preference. This dish is a huge win. Thanks for posting.

How long is it safe to store/eat soft boiled eggs for? I would be a little concerned making this and having a sliced undercooked egg in the fridge all week… looks delicious and I would love to make it…. but I’m concerned about food safety….

They hold for a few days if you leave them in the shell. May not be the most convenient for meal prep, but they won’t last long at all if stored as pictured. I’d say either skip it, leave it shelled (and eat before the weeks up), hard boiled, or night before. Soft-boiled is not really the best for leaving sit.
This was an excellent recipe as is and my family loved it. It is quick and easy and tastes great. It would also be easy to adjust for personal tastes and nutritional needs. Thanks for sharing!

This was my first venture into meal prep, and it was very successful. I was excited to eat dinner each night, and I didn’t think I could eat the same thing multiple nights in a row. The only thing I did differently was doubling the spinach portion of the recipe because I found that each serving had too little spinach. Everything tasted great, and I have been recommending this recipe to my mom and friends who like to cook.

I made this for my meal prep this week and used tofu. It was super delicious and meal prep keeper! I did everything the same, but I froze my block of tofu, defrosted, pressed and crumbled.

What if i remove the EGGS, I dont like eggs and i would love to serve this at home and Office so i dont think everyone will eat Beef. I would love to change beef to chicken or lamb is that possible. Please tell me how to use Lamb or Chicken instead of beef.

The Korean beef is very good, but a little too sweet for me, and I only gently packed the brown sugar. I’ll definitely make it again, but next time I’ll try half the brown sugar.

I used coconut sugar and didn’t try to pack it. I think coconut sugar made it less sweet than brown sugar would have. If you don’t have a coconut allergy in the home, it might be worth a try 🙂

Yes, that is correct. You can reheat in 30-second intervals until heated through, about 2-3 minutes. Hope that helps!
Do you freeze some of the meals? I’m not sure I want everyday. Wouldn’t it be better to not peel the egg before hand?
Unfortunately, I cannot answer this with certainty as I have never tried freezing this myself – there were no leftovers left to freeze! Please use your best judgment for freezing and reheating.
And yes, you can peel the egg beforehand if you wish.

Vanessa, if you use a service like MyFitnessPal, you can easily create the nutritional chart yourself 🙂 It’s pretty easy, and the mobile app will actually do a lot of the work for you. I’m kind of obsessed with it myself!
The calculations didn’t come out so great – those watching their waistlines could easily use slightly less olive oil, leave out egg (already 25 grams protein w/o egg) and use lean ground beef or alternative lower-fat meat. I might even sub most or all of the olive oil with vegetable broth to cook up spinach. It looks too good not to try, thanks for sharing!
If you can’t enjoy a meal without asking your calculator first, then maybe there are bigger issues here than the egg.
Some people are trying to lose weight, ANNA.
Some people are trying to make sure they are losing weight by not over eating. A calorie calculator is helpful with that as it keeps them on track. It’s not that they don’t enjoy the meal, it’s that they would rather know what they’re eating before they over eat. No need to be rude.
You could also try reducing or eliminating the brown sugar altogether rather than leaving out the good stuff like healthy fats.
I would be less concerned about the egg and the olive oil and more concerned with the sugar and sodium levels TBH
Definitely… too much sodium not good for anyone and the sooner that’s learned the better for you. .
I came out with 481 calories per boxed meal using lean beef (90/10) and not adding olive oil to fry the beef. Under 500 cal is not too bad for a lunch.
