Garlic Butter Shrimp Pasta

An easy peasy pasta dish that’s simple, flavorful and hearty. And all you need is 20 min to whip this up!
With the cold weather upon us, it’s all about staying in with your sweatpants and cooking up some major comfort food. Although I should mention it’s pushing 80 degrees F out here in Southern California and I’m still walking around in shorts and flip flops.
This dish will come together in just 20 minutes from start to finish. All you have to do is boil up some pasta and saute your shrimp in a pool of garlic-butter-herb goodness. Once that’s ready, just toss in your pasta and some fresh greens. That’s it. It’s easy, quick, and comforting in any kind of weather!

Garlic Butter Shrimp Pasta
Ingredients
- 8 ounces fettuccine
- 1 pound medium shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper, to taste
- 8 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- ½ teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes
- 2 cups baby arugula
- ¼ cup freshly grated Parmesan
- 2 tablespoons chopped fresh parsley leaves
Instructions
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Season shrimp with salt and pepper, to taste; set aside.
- Melt 2 tablespoons butter in a large cast iron skillet over medium high heat. Add garlic, oregano and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Add shrimp and cook, stirring occasionally, until pink, about 2-3 minutes; set aside.
- Melt remaining 6 tablespoons butter in the skillet. Stir in pasta, arugula and Parmesan until arugula begins to wilt, about 2 minutes. Stir in shrimp.
- Serve immediately, garnished with parsley, if desired.

I pretty much never leave comments on recipes, but this was so incredibly delicious I absolutely had to join in the rave reviews! The great thing about this is it’s amazing as is, but if you have some asparagus laying around, throw it in. Corn? Put that in there! Grape tomatoes? Heck yeah! What if you have chicken, but not shrimp? No problem! I added a squeeze of lemon and it was a great addition. And it was was so to clean up after! Will make this again and again.
I made this tonight and it is a keeper! So full of flavor and delicious! I doubled the garlic and substituted spinach for the arugula. Yummy!

Sooooo good! I add spinach instead of arugula and use farfalle instead of fettuccine. This is a dinner and it seems kind of gourmetish!
You can also add sauted baby bella mushrooms.
The leftovers heat up nicely – just add a few sprinkles of water and pop in the microwave! Prop up your feet and enjoy your latest binge show!
Can you use olive oil instead of butter?

My daughter loves this recipe and regularly ask for it. it is so simple and quick. I do substitute the arugula for broccoli which I sauté before hand with garlic and leave off the red pepper.
What I love about pasta is, you can be as creative as you want because in the end your the one who has to eat it…
About this recipe it gave me idea’s like oregano & red crushed pepper , when I got done it was just wonderful. Put it right to the top of my list.
Really delicious! I couple of things though, if you’re sensitive to heat DONT ADD ALL THE RED PEPPER FLAKES! A pinch is sufficient! I also added the juice from half a lemon.

Bomb Diggity delicious! Unfortunately I didn’t have the baby arugula so I substituted some Frozen Nick’s of onions bell peppers and parsley flakes. Then threw in some Frozen mixed veggies. I also forgot the parmesan so maybe I shouldn’t even be reviewing this because I didn’t really do it according to the recipe. But mine came out as an inspiration based on this recipe and I got to give this tin Stars instead of five.

I’ve made this four or five times now since discovering this recipe. It’s hearty enough for cold weather days, light enough to keep on the rotation for summertime (subbing with margarine or 1/2 olive oil), yet quick enough to make in the middle of the week. Makes my fiancé’s think I spend a good couple of hours cooking when it really only takes about 30 minutes!
Amazing! Made for Valentines day and the wife and kiddo loved it! Super easy to make as well. I added mushrooms since I am such a fungi.

Amazing!!! Couldn’t stop eating. I did make some minor changes though:
– added 1/2 small shallot, and 6 cloves of garlic.
– Replaced two Tbsp of butter for ~1 Tbsp of EVOO
– added juice from 1/2 a lemon once I added the pasta to give a overall fresh flavor
– added more parsely, about 1/4 cup
– used angel hair pasta to soak up more of that delicious butter
– added peas for more plant-based protein and vegetables (fiber) to help keep me full

Made this tonight, it was a hit with my husband. Used spinach that I had frozen in the fall and as an added bit of flavour, put a dollop of red pepper jelly on the side of the plate. MmmmMmm.

Just made this tonight for me and hubby he loves it I substituted spinach in place of arugula
I followed some of the suggestions and used baby spinach leaves. I also substituted half the butter for olive oil. I added a little bacon and goat cheese on the top at the end. This was an exceedingly good meal. Everyone came back for more and I received a ton of compliments. I put some scallops with it too.
Doubled the recipe but only used half a stick of butter for the whole recipe. I also added a tbsp or 2 (eyeballed it) of olive oil. It still had plenty of butter sauce to cover all of the pasta. I used baby spinach instead of arugula and it was AMAZING. Another great recipe! Thanks
This is absolutely delicious! My “Go To”
once a week! I use spinach instead of Arugula. Also, I use Angel Hair Pasta. Plus, I add an extra clove of garlic. When it’s all done. Everyone adds some more cheese on top.
I love using Angel Hair Pasta! It does have a tendency to “clump.”Therefore, I toss it with some Olive Oil in a bowl ahead of time. Works out very well!

Great dish to make on a weeknight using minimal ingredients. As a Louisianan who loves a heavy hand of garlic, I added 2 additional cloves, a sprinkle of onion powder, broccoli and a medley of sweet peppers and bell peppers to give it a punch of flavor and color. I finished it off with a sprinkle of parm after plating. Pleased with the turn out.

Simple to make and damned delicious! I added some roasted red bell pepper strips for a little more fun. I felt guilty about using all of that butter but it was worth it!
We didn’t have arugula either so we used green onion tops for the greens, added a bit more red pepper flakes. Delicious! great recipe to tweak depending on what’s on hand!
Fabulous would use I/2 red pepper flakes for those light weights and didn’t have arugula so substituted spinach and it was a huge hit thank you
I’ve made this twice; it’s becoming my new favorite comfort food! I haven’t included the arugula because I don’t usually keep it on hand. Instead, I add a hand full of frozen green peas to the pasta water during the final minute. The sauce is all you need to flavor the shrimp and pasta but I have sprinkled the shrimp with a little lemon pepper. Thank you for this winning recipe!
The recipe was delicious. I made the mistake of using angel hair pasta and it was very clumpy. Next time, I will consider using ziti.
This was so delicious – in fact my husband said it might be the best thing I’ve ever made. I did make a few changes. First I marinated the shrimp in half the garlic and some olive oil – really does make a difference. I also used about 3 tablespoons of butter but added a splash of white wine. I also added cherry tomatoes as per comment suggestions, but roasted them first. Oh and I didn’t have arugula, but did add the parsley.

The only thing I wish is that you listed number of calories per serving. Due to the whole stick of butter, I’m assuming I’m over my calorie limit for today but I loved the dish!! Will definitely be making this again.

This dish was easy and very tasty!! I added lots more garlic & butter plus some small varied colored tomatoes at the end!! My dish looked like I spent all day preparing it! Paired with a salad and some garlic bread and wine!! It was a hit!! Definitely a recipe I will use often!!

This is a family favorite. We add the red pepper flakes to our own dish because of small children eating this. This is in heavy rotation at our house because it’s SO good. I usually double the recipe for a family of 5. We like leftovers. I usually have baby spinach on hand so that’s what I typically use. Go, make this now! 🙂
Absolutely delicious! As I am not a fan of arugula, I used spinach instead- it fused perfectly with the other flavors in the dish. I also added some cherry tomatoes for color and a hint of sweetness. Will definitely be making this again!
Quick and easy! Had most of the ingredients at home. Didn’t use arugula and parm. cheese but even without still yummy.
Followed the recipe except for adding the arugula. Instead I sautéed asparagus tips with the shrimp. My family as well as my guest all thought it was fabulous. This will be a go-to for me.

It was easy, I used salad shrimp instead. There was plenty of leftovers, it was not too oily, I have a problem with oil foods. My family loved it they want me to make it more often. The clean-up was easy. I think it was one of the best dishes I have made.

I used fresh spinach instead of arugula. Delicious. Simple.
Unless you don’t like tomatoes, you have to add some cherry tomatoes…I made it with the intention of adding them but forgot. Ate leftovers the next day (which were SO much better than the night of!) and added tomatoes. It really makes it.
I also added some basil and pasta water. Used half the amount of butter and used some olive oil and extra arugula. Add what seems to be too much arugula because it won’t. Make sure to add the arugula and parmesan separately. I personally recommend adding the arugula when the pasta is still on the stove and adding the parmesan for serving. It still melts perfectly IMO.
My go-to pasta dish used to be shrimp scampi, but this takes the lead by far.

Simple and delicious. I’ve made this several times following the recipe and it’s always been perfect. Easy weeknight dinner and guest worthy. You can definitely make tweaks to it depending on your tastes.

Cooked this for new year celebration and loved it! Wasn’t able to grab some arugula but I added more red flakes, onion, tomatoes, and paprika to give it a kick. I also drizzled it with lemon juice and a dash of zest.
To top all up, serve it with cold lemon juice.

I tweaked it a little, because I had basil, and not arugula. Added (sliced) cherry tomatoes (not too many), per someone’s suggestion. It worked!
Somebody else suggested to go halfsies on butter + olive oil, and I did that. Also, I’ve recently gotten into making ghee all the time, and so I used that instead of butter.
(If you haven’t made ghee yet, it’s easy and also “damn delicious.” I found an Indian-American woman on YouTube who cooks her ghee in real time — look for it! The video lasts around 18 minutes, as I recall.)

I was looking for a recipe that would call for ingredients I already had in the house when I came upon this one. I see this recipe was originally posted five+ years ago, but it looks like others are just now discovering it, too–and praising it!
Boy, was this a good dish! Not too complicated, but felt like a more sophisticated recipe. And so versatile! I happened to have arugula on hand, but practically any greens would do–spinach, tuscan kale, beet, whatever. Next time, I’m trying broccoli or broccolini florets!
The shrimp, too, could be subbed out with (pre-cooked) chicken, or even fried or baked tofu, for a Meatless Monday meal. I’ll also read through other reviewers’ ideas to get a new spin on it.

Love it , It is much nicer then the scampi recipes I’ve made . Because it uses less garlic . The arugula adds a nice touch . I squeezed a touch of fresh lemon juice on the shrimp after I cooked them. I scaled the recipe down to make it for one . It was still delicious. Will definitely make this again. A keeper !!

This is my fourth time making this Damn Delicious recipe:) It is absolutely fantastic! Today I decided to “lighten” it up a bit by substituting Chardonnay for 1/2 of the butter and it was equally amazing. In addition, I added a handful of cherry tomatoes when I added the arugula for a pop of color and end of summer taste. Highly recommend this recipe as is or lightened up if that is your jam.

Delicious & Filling! Made this dish late Saturday night. Added just a bit of cream for a little thickness. The Arugula gave it a unique taste, since I’m used to adding Baby Spinach or Broccoli to certain Shrimp & Pasta dishes. The meal was easy to follow as well as quick to make…. I love this dish! Its about as easy as it gets. I prefer to use baby spinach instead instead of arugula when I’m making it for my grandson. I’ve used many different pastas. It’s very flexible and easy to add other ingredients. This just one of many Damn Delicious recipes I have made. I like that they are are simple, easily modified and quick, for the most part.

Husbnd said it was the best thing I made all year. I added broccol, cherry tomatoes and green onions since that is what was on hand. Will definitely try with spinch next time.
Actually have a question. After cooking the shrimp, do you discard the liquid before adding more butter to the skillet and then adding the pasta, etc?

Amazing version of this recipe. Being doing something similar for a while with olive oil and it was ok. But doing this with butter, watching the melted butter brown with all the little garlic bits after cooking the shrimp was magical. Even my son, who doesnt like shrimp, ate this up.

Has anyone used ghee instead of butter for this recipe? If so, how did it turn out?
Ghee IS butter. It should be fantastic. Fhee is simply butter that has been slowly melted and the milk solids that form are removed. It lasts longer than butter that hasn’t been treated that way and has a long shelf life. Both are real butter.
It is Damn good! We used a little less butter and a little less pasta. So good. I’ll use the recipe for scampi as well.

OMG! This was ABSOLUTELY delicious!!.. My family & I enjoyed this dish! I wish i could leave a picture of what my pot looked liked before & after… I did tweek the ingredients a bit!.. I used 1head & and half garlic head! 1 whole bunch spinach! And 2 cups parmesan cheese! With 2lbs of shrimp & one 16oz fettuccine noodles! No pepper flakes! But BUGGAH WAS SO ONO… ALOHA FROM HAWAII

I am going to try this but I’m going to use queso instead of parmesan I can’t stand parmesan cheese everything I have except the arugula so we will see how good this turns out I will be making cod as a main piece with bread sticks!!!!

Chungha, this comment does not apply to a particular recipe, even though I’ve tried many of them and drooled over the rest! I want to comment on the way your recipes print out. The recipes easily print on one (1) sheet of paper! On most sites when I want to print a recipe I have to copy them, transfer to a text processing software and paste. Then after the copy and paste I have to manipulate the text, margins, etc. It’s a pain in the you know where!
So I really like the way your recipes are easily printed. I’m still old school and like to have a printed copy by my work station.

Oh my goodness this recipe is so good! Didn’t have arugula on hand so I used baby spinach. I also added coriander, cayenne, smoked paprika and onion powder for a little more depth. Hubs was blown away, thanks so much!

I added some drained canned spinach to the end and stirred it in. I was a little hesitant, but it didn’t badly affect the taste at all.

Try using royal reds if you can find them instead of the browns. They come from deeper water and taste almost like lobster.

My 19yo son made this for dinner tonight as he is home this summer from college. It was a huge hit with everyone. He had to substitute cayenne pepper for the chili flakes, but it was still very tasty. He served it with garlic bread and doubled the recipe for five of us. Honestly, we did not have any leftovers. It was indulgent b/c of the butter, but sinfully delicious!!! Thank you!
Made this – delish and super easy!!! I made a couple of adjustments – used broccoli instead of arugula; seasoned the shrimp with adobo seasoning with lemon pepper seasoning; and cooked the pasta in chicken broth. (Sorry, I know – its annoying when people say they made it and don’t follow the recipe haha) Warning – the shrimp cooks pretty fast so make sure you keep an eye on it!

I just made this recipe with a few changes. I didn’t have arugula so I added beet greens when I added the shrimp to cook. It was delicious and so easy and quick to make. The hardest part was deshelling the shrimp. Jazzies.

This was so delicious, I did modify and added few things. I grilled the shrimp for presentation look and added grilled sweet peppers and cherry tomatoes. With the noodles and garlic butter sauce I added fresh basil with the baby arugula. My wife loved this dish. Thank you!

Love this recipe! I made a double batch for a party and then made it again since everyone ate it up. Just be aware that the crushed red pepper can give it quite a bite. I loved it, but my son who does not like hot spice did not.

Found this recipe on pinterest and cooked as one of my dishes. My husband loved it. Had seconds and asked for it to be part of our weekly menu. Mind you he never liked pasta without tomato sauce before. I use kale instead of arugula. I’m not a big fan of cooking but thank you so much. I can’t mess this up.

I made this for dinner on sunday ( I ate it all :-S) Then made another pot on Monday for my co-workers to try. I know they will love it just as much as I did. I had had a hard time finding arugula in the grocery stores here. One store employee told me to find arugula in the spice aisle **cough Walmart cough cough**

Awesome recipe. But I was out of shrimp so I used Louis Kemp Crab Delights and also did not have any arugula or parsley so I used Edamame (soy beans) to give it some color. Very yummy.

Tried this last night. Fantastic. Everyone loved it. Used spinach instead of arugula. Next time I will also decrease the amount of butter at the end from the 6 tablespoons to 4. A little too much but still very good. When ever I cook something new and the guys love it I am told “it’s a keeper”. As usual, a Damn Delicious recipe is “a keeper”.

Mike, I do agree with you. Granted this a few years removed, but the recipe as is is what I was looking for. The first shrimp scampi I ever had was very much like this, feature the shrimp and pasta, not a lot of extras, that was over 20 years ago. Anytime recently, in the restaurant, disappointed. So hope Chungah is still sharing her recipes
