I love experimenting with gluten free recipes to see what ACTUALLY works!  With this batch, I was hoping for a bit of crunch but ended up with a chewy delight that got me ! And the recipe & method is SO easy! 

You’ll need: 
2tbsp olive oil / melted coconut oil
3 tblspns honey 
1 egg 
2 cups almond flour (buckwheat also works and is much cheaper)
A handful of choc chips – or filling of your choice 
1/2 tsp baking powder 
1 tsp vanilla extract 
2 tblspns nut butter. I used Oh Mega Nut Butters almond choc 

Preheat oven to 180 degrees Celsius. Mix eggs, nut butter and vanilla together, add the oil and honey and whisk together to combine. Then add the flour, choc chips and baking soda and mix until quite a sticky dough. If you find it’s a bit dry, add a splash more oil. 

Roll into balls and pop them onto a lined oven tray – bake for 15 mins or until the bottoms are browned. Remove and let them cool before you dig in
