Taco Lettuce Wraps
A wonderfully healthy, low carb alternative to traditional tacos, packed with tons of flavor and protein!
After making those quinoa black bean tacos a couple weeks back, I was in major need of another taco fix. But with our pending Cabo trip just 4 weeks away, I was desperate for a healthier alternative. That’s how these lettuce wraps happened – the absolute perfect low-carb alternative to fulfill my taco cravings.
And not only is this packed with tons of flavor but it comes together in 20 minutes in just one pot! Now how easy is that? Once you’re done, you can spoon that right into those lettuce cups and stuff your face all. night. long.
Healthy, nutritious, quick and oh-so-tasty. What more could you ask for?
Taco Lettuce Wraps
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 cup salsa
- 1 4-ounce can diced green chiles
- 1 tablespoon taco seasoning
- 1 15-ounce can corn kernels, drained
- 1 15-ounce can black beans, drained and rinsed
- 2 tablespoons chopped fresh cilantro leaves
- Kosher salt and freshly ground black pepper, to taste
- 1 head butter lettuce
- ¼ cup shredded cheddar cheese, optional
- ¼ cup reduced-fat sour cream, optional
Instructions
- Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat.
- Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper, to taste.
- To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style, garnished with cheese and sour cream, if desired.

This was forking delicious! We ate it with yellow saffron rice. The kids and husband ate on tortillas, while I ate it on romaine.
So good and easy!! Was delicious  the next day with tortilla chips!

This has become one of my go to recipes. It is delicious! The only thing I changed was that I use ground chicken instead of turkey. My husband loves it and I feel good about making it.

I know this was from years ago but do you think I could itnit with chicken breast? I’d shred it but I’m wondering if it would be strange. I have so much chicken breast I’m trying to use up with fun dinners for my kids.Â
Ground chicken breast would be a great substitute!
Do you think these would taste good if a substituted ground turkey for ground beef? that’s what i currently have at home and was curious if these would still work out.

These sound great, but I wish they were really low carb! For people on low carb diets corn and black beans are really high in carbohydrates

Would I be able to substitute butter lettuce for like Romaine or Iceberg? I am not sure where I could find a head of butter lettuce.

Oh my goodness, these look perfect! I love tacos, especially the filling, but not always the tortillas, so I often eat the centers with a fork and leave the tortilla on the plate. I love the idea of a lettuce wrap instead! Already pinned!
Here is what I like about this besides being delicious and one pot—–the idea of using lettuce as the wrap. I live alone. Quick meal without having leftover taco shells to contend with. The count down is significantly low now for your vacation. Ole;

What are the seasonings on the plate above? The recipe only calls for taco seasoning, salt and pepper. The plate looks like it has ground red pepper, cumin, garlic, oregano?, crushed pepper flakes, salt, chili powder, and pepper. Is this a homemade version of taco seasoning? If it is would you please give us your version because I would love to try home made taco seasoning.
