The most soothing, comforting soup for flu season! It’s so easy to make you’ll be feeling better in time!
As flu season is among us, this chicken soup has been an absolute god-send.
The veggies and garlic/ginger/lemongrass/lemon juice combo here does absolute wonders and has you feeling better and back on your feet in no time.
It’s just so darn cozy and soothing, and it just warms your soul in so many ways.
TOOLS FOR THIS RECIPE
CAN I USE CHICKEN BREASTS?
Yes, chicken breasts can absolutely be used here but chicken thighs have more dark meat and a higher fat content which will yield juicier, more flavorful chicken.
WHAT IF I CANNOT FIND DITALINI PASTA?
Orzo, rotini or even elbow macaroni are great subs for the ditalini pasta.
CAN I USE LEMONGRASS PASTE?
Yes, absolutely. If you cannot find fresh lemongrass, lemongrass paste will do wonders here.
Cold Fighting Chicken Noodle Soup
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 carrots, peeled and diced
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 tablespoon minced lemongrass
- 1 tablespoon chopped fresh thyme leaves
- 1 tablespoon chopped fresh rosemary
- 5 cups chicken stock
- 2 bay leaves
- 1 pound boneless, skinless chicken thighs
- ¾ cup ditalini pasta
- 3 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh chives
Instructions
- Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
- Stir in garlic, ginger, lemongrass, thyme and rosemary until fragrant, about 1-2 minutes.
- Stir in chicken stock, bay leaves and 1 cup water. Add chicken and bring to boil; reduce heat and simmer, covered, until the chicken is cooked through, about 10-12 minutes. Remove chicken and shred, using two forks; set aside.
- Stir in pasta and cook until tender, about 8-10 minutes.
- Stir in chicken and lemon juice; season with salt and pepper, to taste.
- Serve immediately, garnished with chives, if desired.

I usually hate chicken noodle soup but was desperate to try anything to feel better. I couldnt find any fresh lemongrass or paste anywhere so we didnt use it. I also used a rotisserie chicken and bone broth instead of chicken stock because we needed it out of our fridge. This was the best soup i have ever had and now I love chicken noodle. It would have been even more amazing if I had followed the recipe! Cant wait to make it again.
This was fabulous! I tend to always cook the pasta on the side and end up scooping way too much pasta in my bowl. This was the perfect ratio and perfect calorie count for me. The flavor was SO good and helped me feel better when I was sick. I didn’t add lemongrass because my store doesn’t carry any form of it. I have a similar recipe from my brother, which he’d make when I was suck and always seemed to fix a cold or flu. Tried this one, but made my own chicken stock first, with chicken frames & veges, my brother swears it’s all the marrow & goodness from the bones that cures a cold/flu. Couldn’t get fresh lemon grass, but the paste was just as good. The fresh herbs, ginger & garlic are so important, the lemon finished it off perfectly. Cracker of a dish. Thank you!

I have now made this so many times that the one on the stovetop now is 14 quarts as I always freeze some of the broth. The first time I made this for a house full of covid family members. Let me tell you the entire house was better by the next day, and I never did catch it, likely due to the remarkable soup. Now days I don’t measure any ingredients and I absolutely love it with good old fashioned egg noodles. I would highly encourage any chicken noodle soup lovers to try this recipe. PS: My 4 year old grandson was under the weather the other day and asked for Nana’s soup.
I didn’t have lemongrass and omitted the lemon. I used chicken breasts and diced it into small bites instead of shredding. I used 8oz wide egg noodles because I prefer them. I also added a lot more liquid. Turned out delicious! The house smells so good! I served baguette slices with butter on the side. So glad there’s plenty of leftovers! I got 8 servings out of it.
A few changes: I forgot to buy the fresh thyme and rosemary, so I added in dried basil and oregano. The chicken stock only came in 32 or 48-oz cartons, so I used 48 oz/6 cups and didn’t use the cup of water. I don’t like the taste/oilyness of chicken cooked in soup, so I baked the chicken and added it fully cooked.
This is delicious! So flavorful. I ate mine with a loaf of crusty french bread and the broth was amazing. I chose this recipe because it used ditalini, one of my favorite pastas, and I was not disappointed.
Exactly what I was looking for! I am feeling a little run down so googled ‘flu fighting soups’ and this was one of the first to pop up! After looking at all the reviews I had to make it! Was absolutely delicious. I omitted the lemongrass as I couldn’t get any at my supermarket, and was still fabulous without it! Such an easy soup to make. Have passed the recipe on to my family as well.

I made this recipe as I really love the flavour of lemon. The lemongrass was nice, but I did not enjoy the addition of the lemon juice prior to serving. I left it out when heating up a serve the following days and liked the taste without it. The pasta took heaps longer to cook, (I guess part of that is the brand one buys), and when the leftovers were covered and refrigerated, the pasta soaked up the liquid. I had to add more stock to each serve when reheating, and had some lovely meals. I will make it again, without the lemon juice.
I made this last night as my partner and I have got the nasty cough and sweats – I used a roasted chicken instead (I’m so lazy but it worked!) Added some sauerkraut and lentils and oh my god it’s absolutely INCREDIBLE, I can’t stop thinking about it and I think this will be a weekly staple, thank you so so much!

I love this soup. I use a stick that contains a little turmeric, and I don’t really measure ingredients but it’s so forgiving.. turns out brilliant every time, regardless.

A friend and I caught a pretty nasty cold cold last week. I’m doing better, but my friend is still under the weather. When I’ve been sick, that friend has made chicken soup for me, but it always ended up kind of lifeless and bland. So, since I’m feeling better, I decided to step up and make some soup for the both of us. I found this and made this today. Comments were as follows:

Currently fighting a cold and this delicious soup was perfect! I love how healthy and easy your recipes are, I use them all the time. I had leftover already cooked chicken, so used that – and spring onions instead of chives.
This was one of the best things I’ve ever cooked/tasted! Such a beautiful flavour. I didn’t use lemongrass because I didn’t have any, but it was still fine.
I think next time I make this recipe I’ll just scrape the rosemary and thyme leaves into the pot rather than including the stick part (otherwise you have to pull it out of your mouth often while eating).
I love this dish and can’t wait to cook it for my boyfriend!!

Delicious! I used a rotisserie chicken instead of the thighs. I chopped it and added it at the end. The store was out of lemon grass but I found lemon grass paste. I doubled the recipe and we all loved it!

Awesome! Best chicken soup I ever had. I made it for my stepdaughter because she has been congested and with flu-like symptoms. I doubled the recipe by doubling all the ingredients except the onion (I only used 1, but it was very big). I did not have lemon grass, but I added 2 more Tbsp. of lemon juice because… I love lemon! My daughter, my husband, and I ate all the soup in a day. I just made another double batch today.

Without a doubt, the best chicken noodle I’ve ever eaten or made. I followed the recipe as written I felt it was necessary to ad another cup of water when I was cooking toward the end.
I just made this recipe today, my son woke up with the “stomach flu” and this recipe helps alot. Thank you! Since I didn’thave any carrots I did substitute with pumpkin pieces and it just melts in your mouth.
What if you live in an area where lemongrass just isn’t available. Any suggestions what could be substituted?

I would recommend Cilantro/Coriander to mimic the same flavor profile as lemongrass. You don’t happen to have any Asian markets near you?

Also used large bok choy stems in lieu of celery (as I often do)

Wow wow wow!! This recipe is a game changer! All the fresh ingredients really bumped up this classic recipe! The lemongrass was a challenge to find, but I found it at sprouts in the herbs section. And I didn’t find fresh chives so I excluded that. But this soup was still amazing! I will be sure to find fresh chives next time I make this!
Is there a substitute if you can’t find lemongrass?
I can get fresh lemongrass easily, but still always opt for the lemongrass purée, sold in a tube. I think the brand is Gourmet Garden. Fresh lemongrass is notoriously fibrous & difficult to work with.

This is my go-to recipe for chicken noodle soup. The lemon at the end makes it simply perfect. I also like the use of thighs instead of breasts – my kids prefer this recipe to any other recipe option!

This is a phenomenal soup recipe! Truly, people who eat it say, “damn this is delicious!” I add twice as much fresh garlic and a level tablespoon Of fresh rosemary and a slightly less than a tablespoon if I use ground thyme. Sometimes I add more chicken if it is for a main dish. Otherwise this is a perfect recipe!

I needed a relatively quicker than usual yet still hearty recipe for chicken soup for a sick kid. Ummm… this is the best thing I’ve made all month, probably. I had a cup for myself without pasta, or salt and pepper and it was amazing. I will make this again and again.
I found this recipe in 2018 and have been making it ever since! My husband gets sore throats a lot and whenever he’s sick, I make this soup and he loves it. It’s the most comforting thing when you’re sick and it’s packed with flavor!
Can you freeze it? I do – but freeze it without the pasta!
Otherwise, the pasta gets soggy and soaks up all the broth. I just add and cook the pasta while I’m heating up the soup.

I came across your recipe last year when one of my littles was sick! We ended up eating the whole pot that night! This soup helped us all through winter! Now one of my littles is sick again with a fever, and we’ve all had a cough for a few weeks! First thing that came to mind was making your soup!!! Not an hour after eating and I’m having coughing fits and sinus drainage…..which although annoying is just what I need to get this cough to go away! Plus my littles have both also been having healing symptoms! We have leftovers for tomorrow and I prepped for an additional 2 pots for next time we need help getting back on the mend!!I I just love how balanced this is, and the lemon juice at the end totally brings it all together! I tend to use ginger and lemongrass paste, and add some chicken bullion paste!! Other than that and Salt/Pep there is no reason to add anything as this is the perfect soup!

This is great! I cooked a whole chicken all night in the crockpot (I’m a believer some of the healing qualities come from the bone marrow too) and wanted a new chicken soup idea. This was perfect. The lemongrass, ginger and lemon were an interesting twist that gave the soup a little punch without losing that delicious traditional comfort chicken soup I crave. I didn’t have fresh ginger so I used a little dried/ground. I also prefer the wide noodles for that more traditional comfort food feeling. I added some of my stewed chicken broth with the store-bought and poof… delicious homemade healing chicken soup that checks all the boxes. My daughter (the one who is currently sick) loved it too and said the recipe is a keeper! I’ll probably be making a second batch tomorrow. I will probably make step 1 & 2 and freeze some.

My teenage son was sick with a throat infection and had difficulty eating and swallowing. I made this soup and he absolutely loved it, asking if I could save this recipe to make again. I’m not one for chicken soup but this was great!
So good!! The only thing I skipped was fresh rosemary because the store didn’t have it and I added a little bit of parmesan to my serving right before eating.
I made this today, I used 4 boneless chicken thighs and 2 bone in thigh cutlets ( for extra flavour). I browned the chicken in the pot first, removed the chicken then did the onion, carrot and celery in the chicken juices. The rest was followed as per recipe.
I sent 2 bowls over to my in-laws who have Covid. Only about 250 calories per bowl. This soup will be a regular.

Excellent recipe!! Our substitutions were that we used lemongrass paste and ginger paste, along with rotisserie chicken. It was so good we are making a second batch for dinner tonight since I’m fighting off a nasty cold, and my son is just getting over a sinus infection.

The flavors of this broth are so yummy and soothing. Do not substitute. Do not skimp. Do not adjust to what you think will taste better as it won’t. Perfect soup for those days when only Chicken Noodle will do.
Great soup made it without garlic and onions because we eat low food map delicious soup! Specially when having Covid I added a little Chili pepper.

So good and ready in the time indicated on the recipe. I added a few things to use up stuff in the fridge: baby spinach, sliced mushrooms, and a cup of beef broth in place of the water. I used baby shells as that’s what I had on hand and added a can of cannellini beans for bulk as I was a little shy of a whole pound of chicken thighs. I cooked the pasta separately so it wouldn’t soak up all the broth in the leftovers and added a sprinkle of turmeric and red pepper flakes as well. Hubby had seconds and he’s not a soup guy, so this one’s a keeper!
My husband and I both have terrible colds and this soup literally warmed our souls. I couldn’t find ditalini so I used elbow macaroni and it was awesome.

It’s a myth that cold weather makes us sick (likely Chungha caught something on the plane or in the stadium) but the healing powers of chicken soup have certainly been proven. And the deliciousness of this recipe have definitely been validated by my family. My son came down with a sore throat and sniffles, and this soup was just what the doctor ordered! He loved it and was happy to eat two servings at lunch and dinner. I would suggest that cooks add your lemon juice a bit at a time as lemoni-ness is very subjective and sizes of lemons vary so much. My son thought it was way too lemony so I just added more chicken broth. We all loved it and will be making it again soon – colds or not.

This was SERIOUSLY delicious and just what my fiancé needed as we’ve both had the sniffles the past few days. Only things I did different was using bone broth and adding a tsp of turmeric. But other than that followed the recipe to a T and it came out perfect. Definitely keeping this bookmarked for the next time we get sick. 🙂

Its nurturing and delicious! I was a little sceptical of the additional lemon juice but it works and makes you feel nourished.

I loves this recipe! I changed a few things and the flavors were so amazing! First I seared the chicken thighs for about a minute or so on each side then remove from the pan. Add your carrots/onion/celery and cook on medium low heat for 15mins! Then I added the garlic and ginger and let that sit another 13mins before adding the thyme/rosemary/lemongrass the last 2mins. I added some broccoli when I added the noodles for added texture. Cooked them for 9mins and it was perfect. I used parsley instead of chives at the end and it came out absolutely delicious! I really loved the ginger in this recipe and it was pretty simple to make. Thank you for the great recipe!

Very tasty chicken soup! I love the addition of fresh ginger which is warming and immune-boosting. Lemon juice adds freshness and a boost of vitamin C. I used a rotisserie chicken and dried thyme and rosemary. I omitted the lemongrass because I didn’t have any and used fresh parsley instead of chives. Was definitely damn delicious! Will make again as this is super easy and quick on a weeknight or when you’re feeling a little under the weather.

Very delicious and easy to make. I didn’t chop the rosemary and thyme. Just tied a bunch together and put it in the pot and removed it at the end. I used lemongrass paste b/c that’s all the store had. I put the lemon juice over the chicken which gave it a great flavor. The addition of ginger was awesome. Will make this again and again!
I didn’t have all of the ingredients but needed to cook some chicken soup ’cause we is not feeling well! I used butternut squash pasta, and chicken legs because that is what I had. Still worked. I didn’t have the lemongrass nor the celery which almost made me stop and go to the store. I try to keep lemons around all the time and everything else on the list. But, just didn’t have them this time. Still a good soup and we enjoyed it.

It really is delicious and when you add the spices, it will help give that kick to help elevate, some congestion. Ginger is an anti-inflammatory, great for your chest & nasal congestion. And, when you add the lemon juice at the end, it gives it a slight kick.

I make this recipe every winter. Whenever I need an immunity boost or hubby is sick, I make this. The lemongrass + ginger + lemon combo is known in TCM for their cold fighting properties. As Hippocrates said, “Let food be thy medicine.” And it’s the best tasting chicken noodle soup I’ve ever had.

Made this for a sick friend, with the remainder for our dinner. It was good, and I like the idea of it being extra immune-boosting, but I’m not sure the extra work and special ingredients made that much of a difference over my regular recipe. (I don’t typically have lemongrass or fresh herbs on hand.) I give this a pretty darn delicious. 🙂

Yes, I used red lentil pasta and followed the directions on the box. It had 6-8 minutes.

So good. I will say it was a bit messy trying to grind/chop the garlic/ginger/lemon grass but it was worth it. I am currently under the weather and this soup was just what my body needed. I was sweating from the worth/heat of the soup and the broth taste was DELICIOUS. Great recipe-

Quite labor intensive but very good. Lemon was a little much though. Next time I may cut it down or leave it out.

Have been trying to find something aromatic hearty and warming for the past few weeks and this hit the spot! Can’t wait until I have it again. I found the inclusion of lemongrass and ginger added so much flavour without overpowering the rest of the subtle soup and made me feel like I could fight off any cold or flu. I hadn’t read this blog before but look forward to finding more recipes in future.
This soup was a total lifesaver. Both kids became sick the day my husband was scheduled for surgery. We couldn’t cancel it. So I had to drag them to the hospital. Thankfully it was a small short procedure. When we got home I made this chicken noodle soup, it was a big hit. The most my kids had eaten in a few days. Then, two days afterward, once my children were better, I was still caring for my husband post-op. And I caught my kids illness. I was in tears I was so mad. Two sick kids for a week. One temporarily disabled husband. And now I am sick while my husband is still in recovery. If there was ever a time to be ill, not was NOT the time. Thankfully, I had plenty of this soup leftover and I almost cried when I remembered it in the fridge. So I’m currently banished to my bed, cup of soup in hand (I put mine in a mug for easy eating), and watching National Geographic. I hate being sick with ever fiber of my being, what mother doesn’t?! But this soup has made a very very long week/weekend a bit less horrible. I’ve sent the recipe to everyone I know. And Pinterest. Thank you for this recipe!
I made this recipe as written except I substituted chicken breast for the chicken thighs. It was absolutely delicious. My favorite chicken noodle soup ever.

I was so skeptical about ginger and lemon in chicken noodle soup but I’m so glad I tried it! My bf is so sick and I know ginger helps so much with colds. It’s awesome! I left out the salt and used low-sodium broth. But put more garlic in it. There are so many flavors in this that it really doesn’t need the salt. I also used those frozen egg noodles and they thickened it up a little on their own. I’m def saving this recipe!
Delicious! I didn’t add the lemon and bought the chives but forgot to add them haha. This soup is really simple, but a nice spin on chicken soup due to the grated ginger. Very yummy!
I made this for my husband who has come down with a cold and having a loss of appetite. He loved it! (We both did). I doubled the recipe to have leftovers, but used elbow pasta. We also dipped torn pieces of a sourdough bread, which enhanced the delightful lemon flavor. The fresh herbs from our garden made this soup wonderfully aromatic and healing. Thank you for the recipe!

This a good receipt. I would highly advice not to put in a full amount of lemon. For me it was great tasting Proerty to the lemon add. With the lemon it become over powered with lemon taste. Next time I will for go the lemon.

Just made this tonight for my husband who’s fighting a cold. Used a combination of no salt and regular chicken stock to reduce the sodium content a bit since he has high blood pressure issues but still very good! Thanks for another great recipe!

I will be using this recipe over and over! I actually love cooking and chopping veggies and such, but out of necessity this time I did everything the easy way… shredded carrots, frozen chopped onions, pre-chopped celery, and tubes of ginger and lemongrass, jarred garlic, dried herbs Can’t imagine how much more I would’ve loved it if I did it the “right” way. I also added a TB of turmeric and 2-3 TB of nutritional yeast flakes (didnt measure). It’s amazing, came together fast And my husband with the flu is loving it.
When I’m sick, I typically go for canned chicken noddle soup. After trying this recipe, I won’t be buying another can again! It is so good and the flavors come together so well. As other reviewers suggested, I added some turmeric as well to boost the healing properties. Also, I used orzo since I already had a box in the pantry, and used the same quantity as the recipe stated for the other pasta shape. I found that the orzo absorbed a lot of the broth, so I added an additional cup of water to get it back to the brothy consistency I was looking for.
Excellent soup and very simple to make. Slight deviation on my part. This time I roasted and used a whole head of garlic in addition to using the cloves of garlic as called for in the recipe. But also perfect as written.
This was so YUM! So many flavors!
We are vegetarian, so instead of chicken, I used a can of white beans. It was delishhhhh!

I used chicken breast because that’s what we had on hand, and did add potatoes and broccoli because I added too much water originally. definitely going to be a staple for when we are sick in this house! I made this tonight It is very good. Lots of flavors. I used my bone broth for the chicken broth called for. It was neat to see the soup come together. I am pleased that I had a good amount of collagen. That can be a little tricky sometimes. I will be using this easy recipe again.

Utterly amazing soup! I have been feeling drained and after I made and ate this soup I am convinced I turned a corner. The ginger and combination of other ingredients makes for a delicious heart warming meal. My wife said, “Wow, this is amazing!”

I think it’s pretty darn good. Wish I could have found lemongrass somewhere but couldn’t so I substituted the zest of a whole lemon. Same with the pasta, but what I did sub for that worked well too. Also had trouble finding thyme leaves so I got organic thyme hoping to pull the leaves off but that was just way too much work for this guy. So I just chopped it all up and it seems to work. I haven’t been able to taste anything for the past several days so the aroma and flavor of the lemon was very well appreciated. Now to test it on my sick wife.

First time I’ve actually been bothered to review a recipe (this recipe is definitely worth reviewing). This was fantastic . Having had a good dose of the flu for the last couple of days and not eating anything of any substance, I thought this might be right down my alley. This was wonderful! The lemon makes this recipe a shining star. I am saving this recipe for future reference. I did make a few changes based on what I had on hand. I used dried herbs rarher than fresh, and I had no broth so I used all water and added some Knorr seasoning. I think next time, I will use half an onion rather than the whole onion. I also used wheat pasta. The chicken I used was grilled already, so I chopped it and added it straight to the soup. Very convenient! Thanks for the great recipe.

The chicken in the picture looks like chicken breast. The recipe calls for thighs. So you add the thighs in whole cook then remove and shred? I’ve no doubt it will be good but I was a little thrown off by the photo.

I made this 3 days ago, ate all of it in 2 days & am still craving more! This is by far the best chicken soup I’ve ever made. The combination of the fresh spices with the lemongrass & lemon is so flavorful. I beat/bruised two lemongrass stalks (removed before eating) & used orzo pasta, simmered an hour, otherwise stuck to your recipe. Amazing!

I’m only able to find lemon grass at a small Asian grocery store in my town. However, a handful of bigger grocery stores sell it as a paste (near the mined garlic in the produce section). Not quite as flavorful but so much easier! Also, I’ve made this soup twice in the last month and it is going on the weekly rotation until Spring. So good!

I love Young Living oils; they have a “vitality” Lemongrass oil (I believe FDA OK’d) that I used to substitute when I made the recipe. I used one drop and decided for my taste I wanted one more drop. Just be very careful that you pay attention when adding to soup, more than two would ruin the soup I think. My kids acteally like this soup when sick. ( one of mine is a picky eater). The only thing different that I do is I slow cook this recipe in a crock pot because normally every one is sick at the same time at my house and when im sick the last thing I want to do is stand in frount of a stove.

Wow, first time I have felt the need to make a review…delicious! Followed recipe for the most part, cut a few corners with garlic paste, ginger paste and added chopped onion greens, chopped parsley and a few shakes of cayenne pepper at the end. Not sure my cold is cured but it is the best soup EVER!

I made this tonight. My husband and son are both fighting colds. I used leftover Thanksgiving turkey instead of chicken. It was really good and we all loved it, but I’m glad I, as the one preparing it, am not ill because it is labor intensive to prepare just to get things ready to go in the pot! I am still giving 5 stars because the flavor was great, but I’m definitely going to shortcut some things next time.
